I understand, time to step up and get some good quality knives to match the cooking talent of your kitchen, good for you! From my own experience and knives that I have used and have in my home, my top picks are Wustoph and Henkles, plus I have a couple of Kitchen Aid Knives!. Here's my pros and cons:
Wustoph: Very Expensive (but they have 4 classes of knives) need to be hand washed, professionally stone sharpened at least twice a year (for me, it's like every three months, but I use mine extensively) sharpened with your steel before every use, a lifetime investment that will pay itself off in the fact that you will never have to buy another set of knives in your lifetime and can pass them down (God Forbid) when the time comes!.
Henkles: Somewhat expensive and, of course, the same love and care, hand wash, keep them sharpened, have a thinner blade but keep a sharp edge, great for the serious home cook, but for me, they withered too fast, but I still have them and they are fine!.
Kitchen Aid: Inexpensive, good full length tang for the price, comfortable handles, smaller, thinner, metal for blade, but good for the home cook who wants a good knife without dipping into the monthly savings jar!. I love the smaller knives in their line!.
So, that's just my experience and opinions of what I've used and have at home!. Buying a set of really good knives is important, but it is also about you, how often you use them, what size is good for your needs, handle comfort and possibly, style!. Good Luck and Happy Shopping, wish I could go with you!

I have Cutco knives, both the carving set and steak knives!. They are expensive but they cut beautifully, last a long time, and the company does stand behind it's lifetime guarantee!. I bought the first ones over 30 years ago and still have the original set!. Some of the serving spoons were damaged over the years so about three years ago I got in touch with a rep and no problem he provided me with the information to replace them!. All it cost was shipping and that wasn't much!. I bought an addition to the carving set a couple years ago (smaller carvers) and they are great! I also love the steak knives!.Www@FoodAQ@Com
I invested around $100 for a Wusthof Santoku knife with a grand prix handle and a knife sharpener!. It was well worth the money and I don't have to be burdened with an entire set of knives!. This one knife does it all (it's the same kind Rachael Ray used to use and occasionally Emeril use on the Food Network)
I bought mine on Amazon!.com, but I've since noticed that Linens n' Things and some Bed, Bath, and Beyond stores carry them!. Both stores always send out 20% coupons, too!Www@FoodAQ@Com

I agree with Chef Renee-
I choose Wustohf!. For all tjhe same reasons-Here is a website wih the different types of knives (Wusthof, Henckels, Kitchen Aid, etc) whichever you want, with descriptions, and the different levels of each brand, so you may get good knives, just not as expensive!. They also have individual knives, and sets (or blocks) if you choose-
I have used this website, and they are priced very well, great selection, and very good customer service-Good Luck!!!

I use Dexter-Russel and Ken Onion!. I think you should look for a full tang (this is where the blade forms to the handle and should be the entire length of the handle to be considered full!.) also, the metal that your knife is made from is important!. Stainless-high carbon steel is perfectly fine for most culinary work!. The balance of the knife is also extremely important!. The knife should feel light in your hand and never be dull!. Some other good brands include Global and Henkel!.Www@FoodAQ@Com
Kitchen Aid has really nice sets of of knives!. I lucked out and found mine at TJ Maxx!. You might want to check places like that out before you spend a lot of money!. Kitchen Aid knives in a department store would cost almost $200 and I bought mine for around $60!.Www@FoodAQ@Com
I wish I had a sharp answer and was on the cutting edge of technology, but I am actually quite a dull fellow, anyway you slice it!. I prefer the plastic knives!. I haven't been nicked in years!.Www@FoodAQ@Com
don't spend so much money!. i have one knife, a switch blade!. i use it in the kitchen and on the streets!.Www@FoodAQ@Com
I would have to go with Henkels pro line!. I have used several different brands from Chicago Cutlery to Wustoff and Henkels is the best by far!.Www@FoodAQ@Com
You need to get the Ginsu knife!. You can cut through a tin can and then slice a tomato!.Www@FoodAQ@Com
I've used Snap-on, S-K, and others!. But I always go back to Craftsman!.Www@FoodAQ@Com
You don't need new knives!. You need to sharpen the knives you have and keep the edge in line!.!.!.Www@FoodAQ@Com
I love RADA! I have had a set for years and they really are the best things ever! They were expensive buy worth every penny!!!! You wont be disappointed!
