Do you eat kale raw?!

Yes i eat it raw, i like it raw because of the texture, but it is a tad bit bitter raw!. So what i do is pinch it up in a tossed salad with the other veggies i like and mixed up that way its not so bitter!. Add 2 Tbsp!. of Italian dressing and no more bitter taste, at all!.
I also like it cooked, with a tsp!. of bacon fat, pinch of salt, and a tsp!.
of crushed red pepper!. I only put 2 cups of water in the pot so it will steam instead of boil!. Then when its done, i don't loose the nutrients cause i eat the pot-liquor with cornbread!.

If you cook anything you will destroy some nutrients!. Kale is mostly cooked anyhow!.

Toscana Soup --
INGREDIENTS
12 links spicy pork sausage, sliced
1 tablespoon vegetable oil
3/4 cup diced onion
1 1/4 teaspoons minced garlic
2 tablespoons chicken broth
4 cups water
2 potatoes, halved and sliced
2 cups sliced kale
1/3 cup heavy cream
DIRECTIONS
Preheat oven to 300 degrees F (150 degrees C)!.
Place sausage links on a baking sheet and bake 25 minutes, or until cooked through!. Slice into 1/2 inch slices!.
Heat oil in a large saucepan over medium heat!. Saute onions until translucent; add garlic and cook 1 minute!.
Stir in broth, water and potatoes; simmer 15 minutes!.
Reduce heat to low and add sausage, kale and cream; simmer until heated through and serve!.

You can try some thing like this where the kale is just wilted:
Heat a few tablespoons of sesame oil in your pan!. Stir in some crushed garlic cloves and a nice sprinkling of red pepper flakes if you like spicy food!. Splash the pan with soy sauce and throw in your bunch of kale (de-stemmed)!. Let the kale wilt down (to your liking) and turn off the heat!. Toss everything with a good shake of toasted sesame seeds and enjoy!. I love eating this cold!. Www@FoodAQ@Com
