I buy spring roll wrappers from my local oriental market!. For the filling I use preshredded cole slaw mix in the bag from the grocery store, chunk up any left over meat (pork, chicken, shrimp) or go without, add a little soy sauce (just a little or it's too wet!) & some salt & pepper!. Roll up the wrappers & use a little water to seal!. Then I bake them (vs!. frying in oil) on a foil lined cookie sheet at about 350 for 10 minutes, turn once!. I like these better than take out egg rolls!.
You can also use the wrappers to make crab rangoon!. Just mix up some cream cheese, crab meat, garlic powder & fresh green onion if you have it!. I love to dip mine in a cherry sweet & sour sauce available at the grocery!.
Egg drop soup is also very simple!. Over medium heat chicken broth, add soy sauce to taste & sliced mushrooms; in separate bowl, mix 1-2 eggs!. Once mushrooms have reached almost desired doneness, pour the eggs into the soup in a slow drizzle!. Stir the soup while you're adding the egg & it will create ribbons!. Top with a little fresh chopped green onion!. Serve with some crispy wonton noodles (again regular grocery should have them)!.
Fried Rice the cheater's way: boil rice to directions!. Then in large skillet with oil add rice & start to let cook!. Add soy sauce to rice!. I buy a bag of frozen steamer veggies & cook those per direction!. While rice is browning I push out a little space in the center of the rice & scramble egg in the hole, then mix into the rice!. Add the now steamed veggies into the rice!. You can also add any meat!. Voila!.Www@FoodAQ@Com

Ingredients:
10 fresh scallops, cut into bite-size pieces
? tsp teaspoon ginger juice
1 egg
1 tsp dry white whine
? tsp salt
3 tbsps self-rising flour
Oil for deep-frying
Directions:
1!. Parboil the scallops for 1 minute and drain!. Sprinkle with the ginger juice!.
2!. Beat the egg in a bowl!. Add the wine, salt and flour, and beat until smooth!.
3!. Fold in the scallops and toss until evenly coated with batter!.
4!. Heat the oil to 160°C/325°F!. Deep fry the scallops until golden brown!. Drain on absorbent kitchen paper!.
5!. Serve hot with tomato ketchup (sauce) or hoisin sauce!.
