Authentic Mexican Recipe? Please Help!?!
I am having some dinner guests over tomorrow night from Mexico!. I want to make something authentic for them, but don't have much experience in mexican food!. Do you know what they like to eat in Mexico!? Could you please help me find a recipe!? I would like to include chicken, but that isn't set in stone! Please help, I am clueless!Www@FoodAQ@Com

Mexico is rather large and the food varies A LOT depending on the state!.
Since you don't say where they are from, it is nearly impossible to come up with something specific!.
However,
May I suggest that you serve them something that is YOUR speciality!? most people would rather eat something local while visiting a different country!. It makes the experience more pleasurable!.
Think about it, if you visited Oaxaca, would you like it if they served you mac 'n' cheese!?

I will tell you this: authentic Mexican food served in Mexico does not come under a mound of melted cheese, shredded lettuce, sour cream and chopped tomatoes!. If you decide to make these beef enchiladas, start early in the day because you have to bake a beef roast and then shred it!.

I agree that they may like something made by you be it spagetti or a casserole but why not serve up something simple for a side dish thats easy to make like beef tacos or nachos (Deluxe,cheese bean jalapeno chicken or beef or both) Make a nice salsa and chips(homemade not store bought) perhaps some sipping tequila or ice cold DosXX!.Www@FoodAQ@Com
Instead of giving them something they have all the time in Mexico, why don't you make them something different!. Use a recipe from your background!. I personally think it would be a nice change for them!.Www@FoodAQ@Com

While you may want to empress them with a Mexican dish, you have to remember that they would be the worst critics because they would know how something is really suppose to taste!. However if you consider yourself a good cook and not feel intimidated my any recipe, then perhaps that you can make some Chicken Mole (pronounced Mow-Lay)!.
Buy the following:
a cut up chicken
a jar of Do?a Maria Mole
You'll need flour (or cornstarch), one clove of garlic, canola oil and salt!.
Place chicken in water with salt (enough water to cover chicken)!. Salt is to flavor chicken, so be sure not to put in too much; I'm guessing maybe 2 tablespoons!. Cook for approximately 30-40 minutes!.
Remove chicken from broth and place broth in a bowl!.
In same pot you will be making a rouge!. Use 2 tablespoons canola oil, put in approximately 2-3 tablespoons of flour and garlic, blend and start adding broth one laddle at a time until you have approximately 1 1/2 cups of broth!. Bring to boil then add approximately 3-4 tablespoons of Do?a Maria Mole (until desired color!. Hint: should not be too light but not as dark as sauce in jar)!. Add a laddle or two more of broth then add chicken to sauce!. Bring to boil!. It should have the consistency of gravy, only slightly thicker!. Taste to see if more salt is needed!. If you really like garlic you may want to add more garlic!. There may be directions on the jar of Mole sauce (can't remember since I now make mine from scratch!.!.!.!.but the jar sauce is easier)!.
If you want to really try to expand your Mexican cuisine techniques, with the left over broth you can make Mexican rice!.
In pan use 1/4 cup oil (heated)!.
While oil is heating in blender place 1 clove of garlic a 1/4 tsp!. cumin powder and approximately 1/2 of small onion and 1/2 cup crushed tomatoes!.
When oil is heated, then put in approximately 1 - 1 /1/2 cups of white rice (Balsamic or Yasmin rice is the best!.!.!.!.less breakage)!. Stir in pan until golden brown (you have to watch because it can burn really fast!.!.!.!.non-stick skillet is recommened)!. Once brown, put in items from blender, stir until ingredients bubble, then pour in approximately 2 1/2 cups of hot broth from chicken!. Add salt to taste, place lid until almost evaporated!. You can add frozen peas/carrots if you'd like!.
