Question: What are some lunch recipes that doesn't require reheating!?
i am wanting to make myself and my husband some good healthy meals that do not require reheating!.!.!.

My wife and I take this for lunch during the summer!. Variations can be made for the cooler months with a little creativity:

Caprese salad:
fresh basil, tomatoes, fresh mozarella, dash of balsamic vinegar and olive oil

Whole wheat pita bread sliced into quarters

White bean puree:
1 can (14oz) cannellini beans, drained and put in food processor,
add 1 jar (5oz or so) artichoke hearts,
1-3 Tablespoons olive oil
dash salt
2 cloves of garlic

puree until smooth, maybe add more oil if needed

Olive tapenade:
1 cup mixed pitted olives (green, kalamata, black)
mince in food processor and spread over white bean puree before packing lunch

It's really light, so pack enough!. Sometimes prosciutto and melon is a nice compliment to this and adds a little more protein for afternoon energy!.

Leftover Fried Chicken is great cold! (IMHO) Especially shredded up in a salad!.
My favorite quick lunch is green apple slices, sharp cheddar, wheat crackers and one of those marinated tuna fillets in the foil packets (on the same aisle w/ canned tuna) Www@FoodAQ@Com

Even if this may come as junk food!. Bags of cookies, and chips can be added to the meal!. I was going to add subs, but that's a type of sandwich!.Www@FoodAQ@Com
