Drain the canned tomatoes!. Save the liquid for later!.
Put all the tomatoes on a baking sheet, sprinkle with some EVO and roll them around a bit!. Hit em with a bit of salt and pepper (2:1)!. Not too much!.
Bake the tomatoes at 420F for about ten minutes!. While this is going on, fire up two burners!. On one burner at full heat, get some water, lightly salted, going for your ravioli!. On the other, at about medium to mid high, a skillet with a touch of EVO!. If it starts to smoke, kick the heat down!. IF you have onion or garlic, dice or mince it and toss it in the pan about thirty seconds before your beef!. Brown the beef and salt and pepper to taste!. Drain the fat off and keep this skillet of beef nearby!.
When the tomatoes are done, pull them out of the oven and roughly chop!. They'll still be hot, so be careful!. Put them in with the beef and add your SAVED TOMATO JUICE!. Put any juices that cooked out of the tomatoes in the skillet as well!. You've just carmelized the tomatoes and there's a lot of complex flavors in that juice!.
Toss in a pinch of sugar and a drop or two of vinegar!. Balsamic's good but anything will work!. Just be sparing!. Taste and adjust until it's good enough!.
OK, the pasta!. You know al dente right!? Wikipedia if you don't!. :) Cook the pasta to just before al dente and then pull em out and put them in your beef/tomato stuff!. Gently stir them around a bit and cover the skillet!. Turn the heat down to low and let them go 3 to 5 minutes!. The pasta will pick up the juices from the sauce you've made!.
Then, turn everything off and serve!. Hit it with a bit of parmesean if you have it!. If not, a toWww@FoodAQ@Com

Here is an idea for you tomorrow!.
Stew!.
Brown the beef in a fry pan in a little oil, in batches and transfer to a heavy based pot!. (preferably)
Fry off the onions and garlic and deglaze the fry pan with a little water!.
Add the onions and garlic to the meat!.
If the soup mix is powdered sprinkle over meat and onions and stir to combine!.
Stir in more water until in covers the meat completely!.
Add seasonings, S&P, Worcestershire sauce and bring to the boil!.
Reduce and simmer for 45 minutes, on the lowest heat on an element!.
Check water level and stir from time to time
Add carrots celery and chopped potatoes and crushed tomatoes and juice!.
You may need to top up the level of water and stir to combine!.
Bring to the boil and simmer gently for about 20-30 minutes, or until the potatoes and carrots are cooked!.
Check seasonings once again, and if necessary thicken!.
Serve!.
(You could put everything into a casserole dish and cook in oven, but I prefer stove top)
I omit the potatoes so I can boil and mash, to mop up the gravy!.

Take the tomatoes and slice and deseed them!. This is easy to do with a small knife under running water!. Let dry then dice!. Add evoo and oregano, basil and garlic!. Make this before dinner as a brushetta (like 4-6) hours!. When dinner arrives, make the ravioli and toss with the brushetta, extra evoo and serve with fresh bread, slightly toasted!.
Can I come for dinner, too!?
When you deseed a mater, slice into quarters and using a paring knife under water, scrape out the seeds!. Then let dry on a paper towel for a while!. If you have green pepper and onions, dice up a bit of that, too!. It's like a mexican salsa, but with oregano, garlic and basil it's more Italian!. I make it all the time and serve it when I make roasted garlic, shrimp scampi and crispitos (italian toasty breads)!.Www@FoodAQ@Com
