Question: I love capers! What are some ways I can incorporate them into my cooking!?
Answers:
I make an olive tapenade with them to spread on bruschetta:

(MY recipe!.!.!.not cut and pasted from some website)

3/4 cup cerignola olives pitted and chopped
1/4 cup salt packed capers rinsed well and chopped
4 salt packed anchovies rinsed well and chopped
1 clove garlic minced
The juice of one half lemon (add the zest if you like it lemony)
4 tablespoons extra virgin olive oil
1 tablespoon good cognac
Fresh ground pepper

I hand chop mine for a coarser!. more rustic texture but if you like a finer tapenade you can do it in a food processor!.

Mix all the ingredients together and spread on bread or toss with pasta!. It's also good rubbed on pork or chicken before roasting!.

Depending on the moisture content of your ingredients you may need more oil or more lemon!.

I love to make a Lemon, Butter, Cream Sauce with capers and diced tomatoes!. I use it on chicken breast, sword fish, mahi mahi, any firm white fish, even calamari!

Sweat 2 tablespoons chopped garlic in 1 tablespoon olive oil!. You can also use shallots!
Add in 3 or 4 tablespoons of butter and let melt over low-medium heat!.
Sprinkle in 1/2 tablespoon flour and stir!. Let that cook for 1-2 minutes over low-medium heat!.
Add in 1 cup heavy cream (do not use low fat or reduced fat) and stir!.
Add salt and pepper!.
Stir in 2 full tablespoons of capers and a little chopped flat leaf parsley!.
If sauce starts to thicken too much, add in some chicken stock or water, 1/2 cup at a time!.
Dice one large tomato and put in sauce, cooking gently!.
At the end, add in the juice from 1/2 a lemon, stirring continuously!.

Pour over anything you'd like!. Great on pasta too!Www@FoodAQ@Com

New Potatoes with Caper Sauce --


INGREDIENTS
12 small new potatoes, scrubbed
1/2 cup butter, softened
2 tablespoons capers, drained
1 tablespoon minced green onion
1/3 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon white wine vinegar
salt and pepper to taste



DIRECTIONS
Combine the softened butter, capers, green onion, Parmesan cheese, parsley and vinegar in a bowl!. Set aside!.
Bring a large pot of salted water to a boil!. If potatoes are large, cut into halves or quarters!. Add potatoes and cook until tender but still firm, 15 to 20 minutes!. Drain!.
Add the caper sauce to the pot of drained potatoes and toss gently to coat!. Season to taste with salt and pepper!.

Mozzarella and Tomato Appetizer Tray --


INGREDIENTS
1 tablespoon minced fresh parsley
1/2 teaspoon dried basil
1 pinch dried oregano
1 tablespoon capers, drained
2 cloves garlic, minced
6 tablespoons olive oil

1 pound mozzarella cheese, sliced
2 tomatoes, thinly sliced
1 (7 ounce) jar roasted red peppers, drained and julienned
crushed red pepper to taste



DIRECTIONS
In a medium bowl, mix together parsley, basil, oregano, capers, garlic and olive oil!.
On a serving platter, arrange mozzarella cheese slices and tomato slices in alternating layers!. Top with roasted red peppers!. Drizzle with the herb and olive oil mixture!. Cover and chill in the refrigerator 30 minutes before sprinkling with crushed red pepper and serving!.

Tartar Sauce --


INGREDIENTS
1 cup mayonnaise
1/3 cup sweet pickle relish
1 tablespoon minced capers
1 hard-cooked egg, chopped
salt to taste
salt and white pepper to taste
1 dash Worcestershire sauce
1 dash hot pepper sauce



DIRECTIONS
In a small bowl, mix together mayonnaise, sweet pickle relish, capers, and egg!. Season to taste with salt and white pepper!. Add a dash of Worcestershire sauce and a dash hot pepper sauce!. Stir!. Chill!.

Grilled Tuna Steaks with Grape and Caper Salsa --



INGREDIENTS
2 cups red seedless grapes, halved
1/3 cup capers, drained and rinsed
1 shallot, minced
2 tablespoons chopped fresh parsley
1 tablespoon olive oil
salt and black pepper to taste
4 (8 ounce) tuna steaks
1/4 cup fresh lemon juice



DIRECTIONS
Preheat an outdoor grill for medium-high heat and lightly oil grate!.
Stir together grapes, capers, shallot, parsley, and olive oil in a bowl; season to taste with salt and pepper, and set aside!. Place tuna steaks onto a plate, and brush with lemon juice!. Season with salt and pepper to taste!.
Cook tuna steaks on preheated grill until cooked to desired degree of doneness, 2 to 3 minutes per side for medium-rare!. Serve with the grape and caper salsaWww@FoodAQ@Com
