Answers:
What on earth are you making!? I've never heard of using a gravy from one animal to flavor another!.
To answer your question: it might taste okay, but depending on how you make your gravy, the flavor might overpower that of the more delicate shrimp!. Since gravy has its base in a roux, made of flour and fat (in this case, chicken or turkey) it has a much stronger flavor than a broth would!.
Does the original dish call for chicken instead of shrimp, or does it call for chicken gravy instead of turkey gravy!? If it calls for chicken gravy and you would rather use turkey, there will be a slight difference, but not a huge one!. If it calls for chicken and chicken gravy instead of shrimp, then there will be a big difference and you should not expect it to taste anything like it does with the chicken!.
I would not try to season and cook shrimp like poultry!. Www@FoodAQ@Com

DEFINTELY cook the shrimp separately!. Always cook shrimp until it is just cooked!. If you stew it the shrimp will be chewy and your dish will be fishy (fish and turkey would not be a great combo)!.
You could make this a stir fry with a teriaki sauce (soy sauce brown sugar and a little garlic!. Or make it a scampi with butter and garlic!.
Whatever you do, cook the shrimp and then warm it in the sauce at the last minute!.
