Serves 6 to 8!.

Ground beef mixture:
1? lbs!. lean ground beef
1 large or 2 medium onions, chopped
3 cloves garlic, chopped
1? tsp!. salt, or to taste
Black pepper and cayenne pepper, to taste
1 (16-oz!.) can whole or chopped tomatoes
2 Tbsp!. chili powder
1 Tbsp!. ground cumin
1 cup corn, black beans or red kidney beans, optional
1 cup sliced olives (either black or pimento-stuffed)

Cornmeal mush:
6 cups water
1? to 2 cups yellow cornmeal
1 tsp!. beef granules or 1 beef bouillon cube dissolved in ? cup hot water
1 tsp!. salt
1? tsp!. chili powder
1? Tbsp!. butter or margarine
2/3 cup grated Cheddar and/or American cheese for topping

1!. Preheat oven to 325oF!. n large skillet, sauté meat with onions, garlic, salt and pepper until meat is no longer pink!. Add tomatoes, chili powder and cumin!. Add optional vegetables, if you like!. Stir and simmer for about 30 minutes, then add the sliced olives!.

2!. While meat is simmering, make the cornmeal mush: In 3-quart pot, whisk cold (tap) water and cornmeal together to blend!. Add beef granules or bouillon cube, salt and chili powder!. Cook on medium-high heat, stirring constantly, until mixture thickens and comes to a boil!. Lower heat and continue stirring until mixture gets very thick!.

3!. Remove from heat and stir in butter or margarine!. Let cool slightly!. Preheat oven to 325 degrees!.

4!. Grease a 3-quart baking dish, then layer with about 1/2 of the mush; spreading it on the bottom and partially up the sides of the dish, using the back of a tablespoon!.

5!. Add the meat filling and top with dollops of the mush, spreading to cover most of the top!. Sprinkle with cheese!.

6!. Bake for approximately 45 minutes!.

SUPERFAST SALISBURY STEAK

3/4 pound ground turkey breast
3/4 pound ground round
1/3 cup dry breadcrumbs
2 large egg whites
Cooking spray
3/4 cup water
3 tablespoons tomato paste
2 tablespoons Madeira wine or dry sherry
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon freshly ground black pepper
1 (10 1/2-ounce) can condensed French onion soup (such as Campbell's)
Combine first 4 ingredients!. Divide meat mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty!. Heat a large nonstick skillet coated with cooking spray over medium-high heat!. Add patties; cook 6 minutes or until browned, turning after 3 minutes!. Remove patties from pan; keep warm!. Stir in water and remaining ingredients!. Bring to a boil; add patties!. Cover, reduce heat, and simmer 10 minutes!. Uncover and cook until wine mixture is reduced to 3/4 cup (about 10 minutes)!.

Yield: 6 servings (serving size: 1 patty and 2 tablespoons sauce)

Super Easy and Very Tasty Beef Stroganoff

1 lb ground beef
1 cup sour cream
1 cup brown gravy
2 cups cooked egg noodles (about 1/2 a bag)
Salt and pepper to taste
Garlic powder (optional)

Add beef to large, non-stick skillet!. Season with salt, pepper, and garlic powder (optional) to taste!. Cook on medium heat, stirring frequently!. While beef is browning, cook egg noodles according to package directions!. When noodles are done add a bit of butter or oil to keep them from sticking together!.

After beef is browned, drain fat!. Place back on burner and stir in gravy and sour cream until well mixed and heat till bubbly!. Serve over egg noodles!. Garnish with grated parmesan, if desired!.Www@FoodAQ@Com

Picadillo Tacos

Brown/Drain 1 lb ground beef!. Add a tbsp each garlic powder, chili powder, cumin, and chili powder!. Add 1 cup water and a Knorr or Goya Tomato/e cube!. Stir and then add 1 small diced onion and 1 diced green bell pepper!. Simmer until onion is opaque and water is mostly evaporated!. Serve on warm flour tortillas!.Www@FoodAQ@Com

Sloppy Joes


1 T oil
1/2 cup diced onions
1/2 cup diced green peppers
1 shredded carrot
1 cup ketchup
1/2 cup BBQ sauce
1 T Worcestershire Sauce

Sauté onions, peppers and carrot in oil until onions are slightly brown!.!.!.add remaining ingredients and simmer for 10 minutes!.!.!.combine with 1 pound cooked and drained ground beef!.

I love my grandma's "goulash" recipe!. It's simple comfort food!.!.!. You brown up 1lb of ground beef with a little salt and pepper!. you then add in one chopped up green bell pepper and one chopped up onion ( large ) and get those cooked!. You could add a clove or two of garlic if you'd like!. Then some red sauce!. Boil up some elbow macaroni and drain!.!.!. then combine all that together!. You COULD be done at that point but if you have more time you could put it in a casserole dish and bake it for about a half an hour on 350!.!.!. add some cheese ( mozzerella, provolone ) and put it back in to brown it up and that would make it even better!.!.!.
