What happened to my chicken?!


Question: What happened to my chicken!?
There's a roasted garlic & rosemary chicken recipe that I've made hundreds (or perhaps thousands) of times!. I altered it slightly last night by using skinless boneless chicken breasts!. Normally I would have done 350 degrees fahrenheit for 40 minutes, but I had an extra cocktail (gosh it may have been 2) and left the chicken in the oven for an hour!.

Well it was the worst chicken I've ever made!, "Hockey-puck-like" would be an understatement! It was terrible, I'm not even sure I'll give the left-overs to my dog! It wasn't burnt, just rubbery!.

Did I leave them in for two long!? Any suggestions appreciated!.Www@FoodAQ@Com

You over cooked your chicken breasts!.!.!.

these only need to be cooked for about 15-25 minutes depending on the thickness of each breast!. If you are going to leave it in the over that long, wrap it in foil, keeps the moisture in!.

the skin makes all the difference in the world!. It's like natures basting and moistening glove!. The fat from the inside of the skin keeps it moist and tender!. But that extra 20 minutes didn't help alot either!. If it were covered or uncovered would also make a slight difference in the cooking and condition of the cooked chicken!.Www@FoodAQ@Com

Generally 30 minutes is about all you need for boneless chicken breast!. I am going to assume the original recipe used bone-in chicken as you cooked it for 40 minutes!. Funny about the cocktails - been there done that! I am sure it would turn out great if just cook for 30 minutes!. Good Luck!Www@FoodAQ@Com

Your chicken was way overcooked!. Meat with bones in and skin on them can withstand the higher temperatures due to more protection!. If you use boneless, skinless breasts next time, consider searing them in a pan before transferring to the oven at a lower temperature!.Www@FoodAQ@Com

Chicken breast fillets are very easy to toughen - no skin and fat layer to keep them moist during cooking!. If you want cut down on fat just take the skin off at the end and give that to the dog!.

The extended happy hour cooking time can't have helped either :-)Www@FoodAQ@Com

Actually it was in too long and you should turn over after 15 minutes and cook for a half hour total!. also you should always cook at 375 it the best way and it kills bacteria!.Www@FoodAQ@Com

Whoa! Dogs love rubbery meat!.

Give it to the dogs and the next time you make this dish with the boneless breast of chicken, set the timer for about 30 minutes and enjoy your cocktail or two!.Www@FoodAQ@Com

Sounds like you may have left them in too long!. Don't worry it happens!.

Next time check them after 20 mins, up to 30 mins, turning them over halfway!.

The chicken breast were over cooked!. Maybe you can savage the chicken by shredding it up and putting it in a soup!.

One reason I am not a big fan of breasts!. They are way too easy to overcook!. Maybe next time have the cocktails with dinner instead of before!?!?Www@FoodAQ@Com
