How important is blind baking pastry?!


Question: How important is blind baking pastry!?
I have a quiche in the oven that I need ready in an a couple of hours and need it to cool once cooked through - I didn't have the time to blind bake it, which I always usually do with my quiches -- is this going to make a big difference to my pastry (short cut)!?Www@FoodAQ@Com

It is pretty important with a quiche!.!.!. the bottom will not be cooked through and nothing is worse than an uncooked bottom!.!.!. it isn't horrible, but guests might not appreciate it/be grossed out!.
But the good news is that all you need is like 10-15minutes of baking blind at a high temp just enough to slightly cook it!.
Cover it with wax paper and use baking beans too, so that the crust doesn't puff up!Www@FoodAQ@Com

The only difference is the crust might be a little soggy!. Blind baking keeps the crust flakier once the wet ingredients go in!.Www@FoodAQ@Com

You may find that the bottom of the quiche will be a little soggy, blind baking helps when the filling will cook faster than the pastry!.Www@FoodAQ@Com
