Okay so I am planning on using 2 pounds of beef! I was looking around and a lot suggested french onion soup, breadcrumbs, an egg, worcestshire (sp, lol) sauce and spices to my taste!. My question is, what is the ratio for all of this!?!?!?Www@FoodAQ@Com

I've done something like this!. It comes from a book called Calf Fries to Caviar!. It's a staple recipe in my home!.

Basically, you use:
1 pkg onion soup
2 eggs
about 1/2 cup breadcrumbs or well crushed crackers
about 1-2 tsp Worcestershire
and pepper to taste!.

I actually don't have the recipe with me, but this is what I do for that much beef!. Taste is subjective!. My taste buds just pick up differently on any given day, so I never follow an exact recipe!. I usually just make it up as I see fit, mix well to evenly distribute, and bake/ fry a small amount and judge taste from there, adding seasoning as I see fit!. If you are sensitive to salt, use half the onion mix first, then test cook a bit of the meat!. I've tried with 2 pkgs, and it ends up way too salty, for me!.

When you do that, you can also see how well the meat binds and add more crumbs if necessary!. Just, don't add more liquids because it just won't hold!. Hope this helps!. If you need, I can find the actually recipe and post!.Www@FoodAQ@Com

Great American Hamburger

1 1/2 pounds lean ground beef
Salt and pepper
4 hamburger buns or Kaiser rolls
2 tablespoons butter, melted
Accompaniments (see below)

Preheat barbecue grill; brush and oil the grates!. Lightly wet your hands with cold water; gently form ground beef into 4 patties, about 1-inch thick and larger than your bun!. When forming patties, handle as little as possible!. Loosely packed burgers are crisper on the outside and juicier inside!. Poke a hole in the center (this will stop the hamburger from rising in the center and your not burnt on the edge and only medium in the middle!. The hole will close while cooking!. Season with salt and pepper!.

Place patties onto hot grill!. Cover barbecue with lid, open any vents, and cook 4 to 5 minutes; turn patties over and cook another 4 to 5 minutes (only turn patties once) or until cooked to desired doneness (do not press patties with spatula while cooking as juices will escape and the meat will dry out)!. Remove from grill and transfer onto a serving plate!. NOTE: It is recommended that you cook the Hamburger patty to 160 degrees to eliminate e-coli!.

Brush the hamburger buns or Kaiser rolls with melted butter; toast them on the grill, cut side down for 30 to 60 seconds!. remove from grill and place on individual plates!. Place the cooked meat onto the bottom slice of the bun and add accompaniments of your choice!.
4 slices Cheddar cheese
8 slices cooked bacon
4 fried eggs
1 tomato, thinly sliced
1 small onion, thinly sliced
Iceburg lettuce, cut into 1/4-inch slices
Sweet pickle relish
Ketchup
Mustard
Mayonnaise

BACON WRAPPED HAMBURGERS

1 1/2 pounds hamburger
1 egg
1/2 cup water
1/4 cup dry bread crumbs
1 small onion, chopped
1/2 small green pepper, chopped
1/4 cup lemon juice
1 teaspoon salt
1/2 teaspoon instant beef bullion
6 or 7 thin slices bacon, cut in halves

Mix all ingredients except bacon!. Shape mixture into 6 or y7 patties, each about 3/4 inch thick!. crisscross 2 half slices bacon on each patty, tucking ends under!. Place patties on rack in shallow roasting pan!. Cook uncovered in 350 degree oven 50 minutes!. 6 OR 7 SERVINGS!.Www@FoodAQ@Com

Here are a bunch of yummy burger recipes!. As far as the onion soup mix thing I have never done it but I would 1 packet of soup mix per pound, about 1 tbsp of worcestershire sauce per pd, and then the egg and bread crumbs according to how it feels to you!. I would only do 1 egg for 2 pds though!.

BURGER SUGGESTIONS:
Most of these say to grill them but you can use the broiler or pan fry them!.

Terriyaki Burgers:
1 1/2 pds hamburger
1 8 oz can water chestmuts (drained and chopped)

Marinade:
1/3 cup reduced sodium beef broth or sherry
1/2 cup reduced sodium soy sauce
2 green onions chopped
1 tbsp brown sugar
2 garlic cloves-minced
1/2 tsp ground ginger
6 buns
6 Pineapple rings
6 slices swiss or provolone cheese

Mix the burger and water chestnuts!. Shape into 6 burgers and place in a 13x9 pan!.

Mix all marinade ingrediants and save out 1/4 cup!. Pour remaining marinade over burgers!. Marinate at least 2-3 hours or longer (I did a set for a day and 1/2 and they were super awesome)!. Turn frquently!.

Grill patties brushing with remaining marinade!. Grill the pineapple rings for about 1-2 minutes per saide!. Top the burgers with a pineapple ring, and a slice of cheese!. Serve on buns!. Mmmmmmmm!.

These are good to make up a bunch and freeze to pull out and make later!.

Or top burgerrs with pesto, cheese, and sliced red bell peppers!. Sliced avacadods or quacamole, and bacon and a slice of white cheese!.

Southwestern Burgers:

1 Can Chopped Green Chili's
4 Tsp Ground Cumin
1 Tsp Chili Powder
3/4 Tsp Garlic Powder
3/4 Tsp Salt
1/2 Tsp Pepper
2 Pound Ground Beef
3/4 Pound Bulk Sausage
8 Slices Montery Jack Cheese
8 Burger Buns Split and Toasted
8 Lettuce Leaves
1 Large Tomatoe Sliced
1-2 Ripe Avacado's Sliced and Peeled (Optional)

In a large bowl combine first 6 ingrediants, then crumble the beef and sausage over the top, and combine well!. Shape into 8 patties!.

Grill covered over a medium heat for approx 5 min on each side or until cooked to well done (160 degrees)!. Top with a slice of cheese and let melt (move to a low heat part of the grill)!. Serve on buns with lettuce, tomatoes, and avacado slices!.

Bacon Wrapped Burgers:

6 Slices of Bacon
2 Eggs, Lightly Beaten
? Cup Crushed Saltines
2 Tbsp Chopped Onion
1 ? Tsp Salt
1/8 Tsp Ground Pepper
1 Pound Burger
? Cup Ketchup
2 Tbsp Brown Sugar
? Tsp Ground Mustard

1!.Microwave bacon on on microwave safe plate lined with paper towels unitl cooked but not crisp!. Set aside!.

2!.Meanwile mix the eggs, saltines, onion, salt, and pepper with the burger!. Sahpe into 6 patties, and wrap with bacon!. Secure bacon with a toothpick!.

3!. Meanwhile in a small bowl mix the ketchup, brown sugar, and mustard!. Brush the burgers with the ketchup mix!. Broil or grill, flip and brush on more ketchup sauce is you have it!. Continue to cook until done and bacon is crisp!.

Inside Out 1/2 Pounders:

2 Eggs, Lightly Beaten
Salt and Pepper to Taste
2 Pounds Groud Beef
4 Medium Thickness Sliced Onions
4 Medium Thickenss Sliced Tomatoes
4 Slices American Cheese
4 Tsp Sweet or Dill Pickle Relish
4 Hamburger Buns, Split Open!.

In a large bowl mix the eggs and salt and pepper, crumble the beef over the egg mix and combine well!. Shape into 8 thin-wide patties!.

On, 4 of the patties place one slice 1 onion, and 1 slice tomato, 1 tsp relish, and 1 slice cheese!. Top with remaining 4 patties and firmly press egdes together to seal!. Broil or grill, until done!. (Approx 8 min per side)!. Serve with fave comdiments on the buns!.
Or TOPPINGS:
Sprinkle with, onion soup mix, seasoned salt, pepper (white pepper, cayenne, paprika) chili powder, garlic salt, onion powder, celery salt, itallian seasoning, cumin, curry, worcestershire, ranch dressing mix, itallian dressing mix, worcesershire sauce, dry mustard, soy sauce, terriyaki sauce etc!.!.!.!.

Or add the following on top after you have cooked it!.!.!.

chopped roma tomatoes
whole basil leaves
fresh shaved parmesan
drizzle with olive oil and balsamic vinegar

cubed cucumber, tomato and feta cheese
Yougurt and cucumber dressing
Layer with a pita and garnish with kalmatta olives

salsa
cheese
fresh chopped cilantro

pepperoni
pizza sauce
mozzerla cheese
parmesan cheese

sauteed mushrrom and olives

sauteed:
onions
red bell peppers
green bell peppers
yellow bell peppers

bacon
chedder cheese
b-b-q sauce

avacado
olives
tomatos
red onion

hot peppers
oregano
itallian dressing

walnuts
gruyer cheese
dijon mustard

sliced ham
swiss cheese
sweet mustard

canadian bacon
swiss cheese
terriyaki

roasted red peppers
feta cheese

or drizzle on some itallian or your fav oil and vinegar dressing about 10-15 min before cooking!.

Bacon Wrapped Burgers

1/2 cup shredded Cheddar cheese
1 tablespoon grated Parmesan cheese
1 small onion, chopped
1 egg
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
2 pounds ground beef
6 slices bacon
6 hamburger buns, split

The french onion soup package is good but I like to use 1 packet of dry ranch dressing mix sometimes in mine

for two pounds of beef, start with 2 eggs, 1 cup of bread crumbs, 2tsp!. salt!. that's your basic, after that you can add what ever you like!.Www@FoodAQ@Com

For two pounds of ground beef i would use 1pkg!. soup mix, two eggs, 1/2 cup bread crumbs, 1 tablespoon worcestshire (sp,lol) and how ever much spices you like to taste!. Www@FoodAQ@Com
