Question: Anyone have a good casserole recipe!? !?
Preferably something I can make then throw the meat in last!.!.!.so that it's veggie for me and with meat for the hubby!. I don't eat a lot of meat, but he insists that dinner isn't a meal without meat :DWww@FoodAQ@Com

You did make sense :D Here is a veggie casserole dish, there are quite a few ingredients though! *Gulp* and it said it was 'simple!'

400 g onions
2 cloves garlic
2 green peppers
400 g courgette (zucchini)s
2 medium sized aubergines (egg plant)
400 g tomatoes
2 tbls oil
200 g mushrooms
1 x 70 g (2 1/2 oz) can concentrated tomato puree (paste)
2 bay leaves
1 tbsp chopped parsley
1 tsp chopped marjoram
1 tsp chopped thyme
salt and pepper
250 ml vegetable stock or water
400 g potatoes
2 tbsp (25 g) butter

method
1!. Skin and chop the onions and skin and crush the garlic!.

2!. Remove the membranes and seeds from the peppers and chop the flesh!.

3!. Slice the unpeeled courgettes and aubergines and skin and slice the tomatoes!.

4!. Heat the oil in a frying pan and fry the onions, garlic, and peppers for 5 minutes!.

5!. Turn into a 3 litre casserole with the courgettes, aubergines, tomatoes, mushrooms, tomato puree, herbs, and seasoning!.

6!. Mix well and pour in the stock or water!.

7!. Peel and slice the potatoes thinly, and arrange on the top!. Dot with the butter, and cover!.

8!. Bake in a moderate oven, 180°C, Gas 4, for 1 hour!.

9!. Remove the lid and bake for a further 30 minutes or until the potatoes are golden brown!.

I have to do the same thing sometimes!. I live with my grandparents and my grandma is vegetarian!. But tuna casserole is great with or without the tuna! And it is really simple to make with very few ingredients!. This is the one that I make:

- about 2 cups of elbow noodles uncooked (or whatever kind you prefer)
- 1 can cream of mushroom soup
- about 1/2 cup sour cream
- a handful of shredded cheese
- onion powder, salt, and pepper to taste
- 1 can tuna with juice
- water to consistency desired
- 1 can corn or peas (or whatever vegetable you want)

Directions:
Boil and drain noodles!. Add cream of mushroom soup, sour cream, cheese, spices, vegetable, and water!. At this point you can take some out and have it be vegetarian!. Then add the can of tuna!. You can eat the casserole like this or you can put it in a pan and sprinkle cheese and potato chips on top and then bake!. This is a great recipe for my whole family because we can all eat it! Super simple!.!.!.!.

1 package pastry crust
1 large can Veg-All (drained)
1 16 oz container of sour cream
1 can cream of chicken soup
1 can diced potatoes (just cause I like more potatoes)
2-3 chicken breasts boiled and cubed!.

Spray a casserole dish, put 1 crust in the bottom!. It's moldable so you can stretch it out to fit!. Bake until very lightly brown!.

Mix all ingredients!. Pour over crust!. Top with second crust, bake until brown!.

I'd say 350 for 20-30 minutes!?!? I can't remember!. Just watch it because you don't want the crust to burn!.

Put your side in w/o the chicken then add the chicken to the rest!.

The point of casseroles is that everything cooks together!.
Could you put the meat at one end, or divide the dish!?
Boil 2 cups of pasta shapes, al dente, then drain!.
Mix with 1/2 cup of chopped celery & 1/2 cup of chopped onion!.
Add other vegetables (peas, corn, carrots, etc!.) if you have them!.
The meat can be cut-up chicken, ground beef, sausage, weiners, etc!.
Last you'll need some kind of sauce; tomato, mushroom, cheese, etc!.

you could make mac n cheese but just add ground hamburger meat to his at the end so that it won't mix with yours!.

salsa-turkey casserole
1 tablespoon olive or vegetable oil
1 1/4 lb ground turkey
1 cup Old El Paso? Thick 'n Chunky salsa
2 tablespoons Gold Medal? all-purpose flour
2 cans (14!.75 oz each) Green Giant? cream style sweet corn, undrained
2 cans (15 oz each) Progresso? black beans, drained, rinsed
1 tablespoon chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
1/8 teaspoon pepper
Topping
1 pouch (6!.5 oz) Betty Crocker? cornbread & muffin mix
1/3 cup milk
2 tablespoons butter or margarine, melted
1 egg


1!. Heat oven to 450°F!. Spray 13x9-inch (3-quart) glass baking dish with cooking spray!. In 4-quart Dutch oven, heat oil over medium-high heat!. Cook turkey in oil 4 to 6 minutes, stirring frequently, until no longer pink!. Stir in salsa and flour!. Cook 2 to 3 minutes, stirring constantly, until slightly thickened!.
2!. Stir in remaining casserole ingredients!. Heat to boiling!. Spread turkey mixture in baking dish!.
3!. In medium bowl, stir all topping ingredients just until moistened (batter will be lumpy)!. Pour topping over turkey mixture; gently spread to sides of baking dish!.
