Old Time Fudge

3 cups sugar
4 heaping tablespoons cocoa
3 tablespoons light corn syrup
1 cup evaporated milk
6 tablespoons butter, plus extra for buttering dish
1 cup chopped pecans
1 1/2 teaspoons vanilla extract

Mix sugar and cocoa; add syrup and milk!. Cook in saucepan over medium heat until a small drop forms a soft ball in cold water (234 to 240 degrees F on a candy thermometer)!. Remove from heat!. Add butter, pecans, and vanilla!. Beat with mixer or by hand!. Pour into a slightly buttered oblong glass dish and cut into squares!. Work fast, as mixture thickens quickly!.

5 minute fudge

3 cups chocolate chips, according to preference (such as 1 1/2 cups milk chocolate chips plus 1 1/2 semi-sweet chocolate chips)
14 ounces fat-free sweetened condensed milk
Dash salt
1 1/2 teaspoons vanilla extract (or peppermint extract for Choco Mint Fudge)


Optional Mix-ins to personalize your fudge, such as:
For Rocky Road Fudge: 1 1/4 cups miniature marshmallows + 1 cup walnut pieces!.
For German Chocolate Cake Fudge: 1 cup flaked or shredded coconut + 1 cup pecan pieces!.
For Peppermint Stick Fudge: 1 cup crunched-up candy canes!.
For Peanut Butter Fudge: 1 cup of peanut butter M&Ms!.
Preparation:

Line an 8 x 8-inch or 9 x 9-inch square baking dish with foil!.
Add chocolate chips, sweetened condensed milk, and dash salt to an 8-cup microwave-safe glass measure and stir to blend!. Microwave on high for 1 minute!. Stir and microwave 1 minute more!. Stir until chocolate chips are completely melted and a smooth mixture has formed!.
Stir in any mix-ins you're using to personalize your fudge (including vanilla extract) and spoon into prepared baking dish!. Cover and chill in refrigerator for at least 2 hours, or until firm!. My ex mother in law worked with a lady who loved their fudge!. She wrote to the company and asked for the recipe!. They sent it to her!! Then they sent her a huge bill!. FANNIE MAY FUDGE

4 CUPS SUGAR
1 CUP WHOLE MILK
1 TSP VANILLA
25 LARGE MARSHMALLOWS (CUT UP)
1 CUP BUTTER (NO MARGARINE) = 2 STICKS
18 OZ MILK CHOCOLATE (CUT UP)
12 OZ SEMI SWEET CHOCOLATE CHIPS
2 OZ UNSWEETENED CHOCOLATE (CUT UP)
1 CUP NUTS (OPTIONAL)

MIX TOGETHER MILK, SUGAR, VANILLA & BUTTER!.
BOIL FOR 2 MINUTES
TURN OFF HEAT
ADD MARSHMALLOWS & STIR UNTIL MELTED
ADD CHOCOLATE ONE KIND AT A TIME!. STIR RAPIDLY UNTIL MELTED!.
ADD NUTS IF DESIRED

GREASE, WITH BUTTER, A 12x16x1 SHEET CAKE PAN OR TWO 9 x13 PANS
PUT FUDGE IN PAN
WAIT UNTIL FUDGE IS SET BEFORE CUTTING

Just add as much as necessary ordinary sugar to your food processor and work it to the desirable let's say bulk!.
