But, really, you can put in whatever you want!. Make sure there is ground meat and bread of some sort (dry crumbs are fine instead of fresh) and finally eggs - always!. Sorta like meatloaf minus the ketchup or chili sauce!.
It is important to not overhandle the meat!. So mix the eggs, spices and all the other stuff and then add the meat and mix it with your hands until it is combined, but not squished to death!. I do a small test meatball!. Fry it up and taste it for texture and seasonings!. Adjust then or get rolling making the balls!.
I make a batch of balls (enough for the pan - but not crowded or they steam not brown)!. I turn the heat up high add the oil, let it heat to below smoking and then add the meatballs!. Adjust heat down slightly if they look out of control!. No lid, but use a splatter guard or a piece of foil or they will steam!. Meanwhile, while keeping your eye on the pan, make your other meatballs!. turn them when the first one you put in starts to get nice and dark brown!. Try to brown all around!.
I shape the meatballs and put them on a sheet pan!. All the meatballs should be the same size!. I like golfball size!. Sometimes I do them slightly larger!.!. When done you can set them aside on a paper towel lined sheet pan!. You may need to get some of the fat out of the bottom or you will have a fire hazard!. Sometimes it is best to dump the whole pan of its juices (b/c there are liquids in there that won't make a nice browned meat and the popping will be obnoxious) and pour in new oil!. No need to wipe!.
They can be used directly, refrigerated in tupperware or frozen!. Put them on a sheet pan with no paper and pop the whole pan in the freezer!. Let them mostly freeze (or all the way) and then into a ziploc!. That way they will freeze individually so you can select just what is needed later!. Once you've got the ground beef, eggs & breadcrumbs, use parsley, italian seasoning, minced garlic,cracked black pepper and sea salt to taste, add worchestershire sauce (just a couple drops) and then cut up little tiny cubes of good italian mozzarella cheese and pop them in the centre of each meatball!. They are soooo awesome with that gooey cheesey surprise inside!!! Go easy on the spices at first, just a pinch of each and once he gets to like them more, increase the spiciness of your food more to your taste, a little at a time!. 1 kg (1 lb) lean mince (hamburger)
large bunch of parsley, chopped
1 cup Parmesan cheese, shredded
1/2 cup Romano cheese, shredded
1 large egg
sea salt
cracked pepper
Combine all ingredients in a bowl!. Shape into small meatballs and place in an ovenproof dish!. Pour a large can of good quality tomato soup over the top!.
Cover and cook in a 180oC oven (about 350F) for 30 mins!. Remove, cover and cook for a further 5/10 mins

well you need the egg, bread crumbs, sometime people use a little milk-i don't, you can add some cooked rice and make porcupine meatballs!. i just throw in what i feel like!. he doesn't like spice so maybe just a little garlic and onion powder!. for a change once in a while crush up some chips or nacho chips and use instead of bread crumbs!. i'm waiting to see other suggestions to!. new recipies are always good!.Www@FoodAQ@Com
