Lemonade

Makes 1L

Ingredients
3/4 cup sugar
juice of 2 lemons (approximately 1/3 cup)
Method
Place sugar in a large saucepan with 1 litre cold water and lemon juice!. Place over medium heat!.
Stir constantly for 4-5 minutes or until all the sugar has dissolved!. Bring to the boil then lower the heat!. Simmer for 6-8 minutes!. Remove from the heat and refrigerate until completely chilled!.
Serve the lemonade with plenty of ice and crushed kaffir lime leaves if available!.
Notes & tips
The lemonade will keep (covered) in the fridge for up to 5 days!. It makes great iceblocks too - just fill an ice cube tray or iceblock moulds and freeze!.

The Best Lemonade Ever

To make sugar syrup

Add 1C sugar & 1 C water to a sauce pan & bring to boil!. Stir mixture until sugar is thoroughly dissolved!. Remove from heat & let cool!. Store in sealed container in fridge & use when needed!.

To make the lemonade

1 C lemon juice from a freshly squeezed lemons (about 6 lemons, I have used as little as 4)
4 C very cold water
1 whole unpeeled lemon, cut crosswise (optional)
ice cubes
1/2 C - 1 C sugar syrup

Combine lemon juice & sugar syrup in large pitcher, add water, lemon slices & ice cubes!. Stir!. serve cold
