You take small cucumbers (usually called pickling cukes) scrub them until they are clean and aren't prickly anymore, then you stuff them tightly into hot, sterilized jars with a little bit of dill & garlic cloves or pickling spices (depending if you want dill pickles or sweet pickles)!. Then you pour over them a hot mixture of vinegar and water & salt (called pickling brine)!. Then you have to put them into the oven in a pan with water in the bottom and cook them for about 10 minutes so that they stay crisp and don't go streaky!. Then you put sterilized lids on the jars and let them cool a bit and then seal them up tight!. Everything has to be all clean and sterile so bacteria can't grow in the jars!. And the pickles are all weak and no good to eat for at least a year!. Well, my mom liked them weak and flavorless, but I didn't like them until they were a year old and had gotten some bite to them!Www@FoodAQ@Com
Basically, without giving you an entire recipe, pickles are made by putting things in vinegar and letting them soak!. Usually spices are added, and the whole thing is sealed up to keep it safe and clean!. When most people say "pickles" they mean pickled cucumbers!. But lots of things can be pickled - like eggs, and pigs feet! Www@FoodAQ@Com
