Potato Lasagna

Ingredients:
3 Tbsp!. olive oil
1 onion, finely chopped
2 cloves garlic, minced
5 cups frozen country style hash brown potatoes
1 lb!. ground beef or ground turkey
1-1/2 cups frozen mixed vegetables
2 cups pasta sauce
1/2 tsp!. dried Italian seasoning
1-1/2 cups shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
Preparation:
Preheat oven to 350 degrees!. Grease a 9" square baking or casserole dish!. In a large skillet, cook onion, garlic and potatoes in olive oil over medium heat until potatoes are golden brown, about 5-6 minutes!. Remove mixture from pan and set aside!.
Add the ground beef or turky to the skillet and cook and stir until browned!. Drain if necessary!. Add vegetables and pasta sauce!. Cook and stir over medium heat until warmed through, about 3-5 minutes!.

In prepared pan, layer half the potato mixture, half the meat mixture and half the cheeses!. Repeat layers!. Bake at 350 degrees for 20-30 minutes or until bubbly and cheeses are melted!. 4 servings

Sheperd's Pie!
Easy Shepherd's Pie Recipe
1 1/2 lbs ground round beef (substitute your minced beef here)
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice

1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes)!.
2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan!.
3 Sauté onions in butter until tender over medium heat (10 mins)!. If you are adding vegetables, add them according to cooking time!. Put any carrots in with the onions!. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked!.
4 Add ground beef and sauté until no longer pink!. Add salt and pepper!. Add worcesterchire sauce!. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist!.
5 Mash potatoes in bowl with remainder of butter, season to taste!.
6 Place beef and onions in baking dish!. Distribute mashed potatoes on top!. Rough up with a fork so that there are peaks that will brown nicely!. You can use the fork to make some designs in the potatoes as well!.
7 Cook in 400 degree oven until bubbling and brown (about 30 minutes)!. Broil for last few minutes if necessary to brown!.
Serves four!.

keema lamb mince

Takes 45 minutes to make

500g pack lamb mince
1 onion, finely chopped
2 garlic cloves, finely chopped
4 tomatoes, finely chopped
2 tbsp your favourite curry paste
200ml coconut milk


1!. Heat a deep, wide frying pan!. Add the mince, onion and garlic and fry for 5 minutes!. Stir in the tomatoes, curry paste and coconut milk!. Simmer for 30 minutes!. Serve with steamed rice and garnish with fresh coriander!.
If freezing: Cool, then freeze in a large freezer-proof container!. Cover and freeze for up to 3 months!. Defrost at room temperature!. Tip into a saucepan, add a splash of water and reheat for 5-10 minutes until piping hot!.
