Question: My mom is experimenting with pickling, and her 'pickles' came out looking carbonated!? Are they safe!? !?
Answers:
It sounds like the pickles are fermenting if they are in canning jars!. That is not good if they are in a large brining jar or earth ware crock they will be fine just keep them covered with a kitchen towel the scum that forms on top needs to be skimed off daily when they finish fermenting just wash them good in cold water place in clean sterilized hot canning jars add the boiling hot canning brine made with water vinegar salt and spices remove any air bubbles with the handle of a wooden spoon cover with a sterilized and hot canning lid tighten lids place in a draft free place to cool!. If your mom is new at making pickles
I suggest that she buy [Mrs Wages Pickling Mix
and follow the directions on the package to the

What do you mean by carbonated -- little bubbles!? Maybe she didn't tap the jars enough to remove the bubbles!. I don't know what your mom's recipe is so that's all I can think of!. We pickle every year but have never had that problem!.Www@FoodAQ@Com

I'm not sure I understand what you mean!. You're supposed to use a knife or plastic canning stick and gently press around the inside of the jar against the food to release any air bubbles!. IF that's all it is!.!.!.they're safe to eat!. Www@FoodAQ@Com
