Good question!. Ribeye (steak) is made from prime rib!. Typically, it has the bone removed!. New York Strip is a sirlion made from the entire sirloin!. The both contain a lot of marblized fat within the meat, so they are delicious!. Ribeye tends to be slightly more tender!. Sirloin is still tender, yet has a more dense grain pattern!. Mild marinades and grill rubs work great on both!. To make a long story short, the names hint at the location of the cow's body they each come from!. Ribs(at the chest area) and loins(between the stomach area toward the hind quarter)!.Moo MooWww@FoodAQ@Com

Well, look at a pic of a Porterhouse steak!. It has the "T-shaped bone" in it, and on one side is the NY strip and the filet mgnon!. On the other side of the T is the ribeye!. Most "T-Bone Steaks" you see in a grocery store have teh filet mignon removed, b/c they can sell that for much more $$ per lb!.

ribeye is better marbled and has more fat on it, a very thick ribeye is what they call "prime rib"

NY strip is a strip generally with a bone down the side but not always!.

The NY strip is leaner and better for you!.

Ribeye is a little fattier, NY strip a bit pricierWww@FoodAQ@Com
