There are a few options you can do, first you could slice it into 1/2 inch pieces, coat it in egg and breadcrumbs and bake it for about 20-25 min on 350 degrees!. Or you could melt some butter, slice the eggplant and sautee it with whatever herbs you would like, both are good it all depends on what you would like!. Personally I would make it indian but I doubt you have the spices (most people dont, if you do edit your question and i'll give you the recipe)Www@FoodAQ@Com
I would blanch the baby eggplant and then saute in butter and garlic!. Just before serving, slice the eggplant from the bottom back to the stem but not through the stem and then fan it out on the plate - presents very nicely!. Works well for baby zucchini and summer squash as well!.
