He's probably scared to death he's going to starve, isn't he!? Does he like Taco Salad!? Here's a recipe for a Taco Casserole that is made with beef substitute!. Since the veggie meat is a small part of it, if you get a decent veggie burger, he might not even notice the difference!.

Or serve Spaghetti - you can make the meatless stuff so good and filling that you don't even notice there is something "missing"!. It's real easy if you purchase the Spaghetti sauce ahead of time and just warm it up, adding a few ingredients of your own if you wish!. Serve it with toasted garlic bread (or if that's not on his list of decent foods, just a loaf of french bread would do)!. Serve it with a side salad of fresh greens or even jello with fruit - or with a really sweet cantaloupe cut into cubes and cubes of a tasty cheese, like Brie or Fontina!.

For them

Ribs!.

I would get a deep baking pan or dish, set one layer of ribs on the bottom of the pan!. then fill the rest of the pan with water and a dash of salt and a dash of lemon juice!. I then heat an oven to 350 f and then cover the pan with aluminum foil and make sure it is covered and pinch sealed or rolled over the edge of the pan!. I then stick the ribs in the oven for 1!.5 hrs!. Then pull them out and take aluminum foil off and dump water, then smear with bbq sauce, place back into a 250f oven with no foil and let them sit in it for another half hour!. or stick on a low heat grill!. then pull them off heat and set for 5 minutes, and eat!.
