Keep it simple for most nights and make or buy a fancier meal when the mood strikes or you have lots of time!.!.!.

If you have little time during the week-----Invest a couple of hours on a day off and your payoff is healthy quick meals during the week!. Cook up a brown rice for the week!. Some of the quick cooking brown rice is pretty tasty, too!. Put the cooked rice in a container in the fridge!. Make a pot of soup, stew or chili!. Marinate and grill chicken breasts!. Put it in the fridge!. Have on hand bagged frozen veggies, various types of canned beans, bagged salad!.

Now, during the week, take out the rice and chicken and heat!. Add some salad or some cooked vegetables on the side!. Or start with a plate of salad, add chopped chicken and some rinsed drained beans and bottled dressing!. Or start with a bowl with rice, ladle on some of the chili and heat!. Etc!.!.!.

If you have a bit more time on weeknights-------A bit of prep beforehand can make all the difference!. I usually buy a large pack of chicken breast and divy it up among freezer bags, adding different seasonings and/or marinades to each bag!. Just put one of bags in the fridge(in a bowl to catch any drips) as you're cleaning up the kitchen for the night!. Then I can bake or grill the defrosted chicken and make some fresh rice, cook frozen vegetables, etc!. also works well with fish but cook it before the month is out!.

And sometimes, I'll put together a lasagna(with the no cook noodles) as I'm making something else that uses similar ingredients!. I put it in the fridge or freezer for another day to just pop in the oven!. I also keep a freezer bag in the freezer filled with sliced italian bread--then I can easily take the pieces I want out to make some quick garlic bread or croutons when needed!.

You could roast a chicken with your favorite veggies, maybe some potatoes!. You can air-seal everything into baggies and it will be fresh and ready to eat the whole week!
You can also make up a huge batch of chicken, hamburger, or veggie tacos!. Just make sure to place every item into an air-sealed bag to keep it fresh!
Spaghetti with a lots of veggies in the sauce is another option!. (That way they are also getting their veggies)
You could also make breakfast for dinner, I know i loved this every once in awhile as kid! You could make zucchini pancakes, and now you are sneaking in some veggies as well! Egg burritos with fresh salsa is fun too!
You could also do a baked potato night, were you bake a ton of potatoes and then put out/make a variety of toppings, from cheese and broccoli to sour-cream and bacon bits!
This is all that comes to mind at the moment!. =)Www@FoodAQ@Com

Fried rice - scramble some eggs, add leftover veggies, meat and saute in some oil, then add leftover rice (has to be at least day-old) and fry until hot - add soy sauce and serve! Great recipe for using leftovers!.

Clam chowder - saute onions, shallots if you have them, add potatoes and water and boil, add canned clams, thicken with a little flour, mix with sour cream just before serving!.

Taco salad - just have to cook the hamburger with seasoning, throw in tortilla chips, lettuce, tomato, and shredded cheese - serve with salsa and sour cream!.

BBQ pork or beef - throw in a crock pot with a little water, let cook all day (or boil for an hour in some water), drain water, shred meat with a fork, add tons of BBQ sauce, simmer until you're too hungry to wait longer!Www@FoodAQ@Com

A few of my favorites (I'm 17):

tacos, enchilladas, and nachos
chili, stew, soup with warm flat bread or corn bread
turkey or chicken wraps with lettuce, tomato, and ranch dressing
chicken stir-fry
salmon with rice and brocolli
chicken salad
pizza (I particularly like mushrooms and tomatoes on it)

I really try to limit red meat!. I don't like it much, and my mom figures it's not good for me anyway!.

I always have glass bowls with mixed salad greens and a fruit salad in the refrigerator; and at least 1 or 2 of the following: bean salad, potato salad, Greek salad, pasta salad, coleslaw; fruit ambrosia!.!. So, I always have sides I can pull out to serve!.!.!.!. Chicken fajitas; tacos; quesadillas; chili; Porcupine meatballs; BBQ (hamburgers, fish, hot dogs); pigs in a blanket; Taco Salad; fish & chips; Buffalo wingsWww@FoodAQ@Com

Chicken is very healthy and easy to cook!. It is sold at most grocery stores deboned and skinless in the freezer section!. also hamburger helper is always an easy out!. Try frozen vegetables as well!. You can google easy recipes online!.Www@FoodAQ@Com
