Question: Whats the coarse stuff on the outside of muffins!?
not cake muffins, or the big smooth ones, but the round flat ones - are they breakfast muffins!? the stuff is like a coarse flour - look and texture like parmasan but not as smelly!. Thanks!Www@FoodAQ@Com

I think you're talking about what we in the USA call English Muffins so it's our cornmeal on the bottoms!. Thomas' is the best known brand, so I've given you a link to them below!.

I found something else out, that it sometimes is dusted with breadcrumbs and sometimes cornmeal!. You learn something every day!Www@FoodAQ@Com

They either use polenta flour
or semolina flour!.Www@FoodAQ@Com

sometimes rice flour is used to make the bread really crunchy!. Otherwise it's usually just plain white bread flourWww@FoodAQ@Com
