I just discovered three unopened packets of cornflakes close to expiry date in my pantry and I wondered if I could do something useful with them!?Www@FoodAQ@Com

They will stay good for months past the expiry!. They are filled with things that keep them stable!.

Yes, however, they can be crushed up and used for breading!. I know they can also be incorporated in biscuits, but have no recipe!. Here's an idea for breading and cooking!.!.!.

Chicken, Fish, or Pork cutlets
Mix a little milk and egg
Put seasoning (salt pepper garlic powders, etc in the crushed flakes

Run the meat through the egg milk mixture
Dip in flakes until coated well!. May double dip back in the milk egg and flakes a second time for better coating!.

Place on oiled baking sheet on (I think) gas three or four and bake until done, maybe 35-45 minutes depending on thickness!.
Adjust oven up and down to prevent over browning!.

Finally, pull out just when juices run clear or the meat thermo reads the right temp!.

The food will cook round five minutes as it sits out of the oven!.

Give it a go!. I think you might like this way of doing!. The calories saved will be significant if that matters!.

Cornflake crusted baked chicken -
Ingredients

* 4 bone-in, skinless chicken drumsticks
* 4 bone-in skinless chicken thighs
* Coarse salt and ground pepper
* 1 large egg
* 2 cups crushed cornflakes
* 1 tablespoon olive oil
* 1/2 teaspoon cayenne pepper (optional)


Directions

1!. Preheat oven to 400°!. Rinse chicken, and pat dry!. Season generously with salt and pepper!.
2!. In a small bowl, whisk egg with 1 tablespoon water!. In a large bowl, mix cornflakes with oil, cayenne, and 1 teaspoon salt!.
3!. Working with one piece of chicken at a time, dip chicken in egg mixture, then coat with seasoned cornflakes, pressing flakes to help them adhere!. Transfer coated pieces to a rimmed baking sheet!. Bake until golden brown and crisp, about 30 minutes!. Sprinkle with salt and pepper before serving!.

HASHBROWN POTATO CASSEROLE

1 (32 oz!.) pkg!. frozen hashbrown potatoes, thawed
3/4 c!. butter, melted
1/2 c!. onion, chopped
1 (10 3/4 oz!.) cream of chicken soup (undiluted)
1 (8 oz!.) sour cream
1 c!. (4 oz!.) Cheddar cheese, shredded
2 c!. cornflakes
Lemon twist (optional)
Parsley (optional)

Combine potatoes, 1/2 cup butter, onion, soup, sour cream and cheese; stir well!. Spoon into greased 2 1/2 quart casserole!. Crunch cereal and stir in remaining butter!. Sprinkle over potato mixture!. Bake at 350 degrees for 50 minutes!. Garnish with lemon and parsley!. Serves 10 to 12!.Www@FoodAQ@Com

Au gratin Potatoes

Bag of Shredded or Cubed Hash Browns
2 cans cream of chicken soup
8 oz!. sour cream
3/4shredded cheese
1/3 milk
1/3 cup chopped onions

Mix in a bowl and put in a cake pan!. Top with cornflakes and bake 350 degrees for 30 minutes!. These are yummy potatoes!

NO BAKE PEANUT BUTTER COOKIES
1 c!. sugar
1 c!. light corn syrup
2 c!. peanut butter (18 oz!.) jar
4 c!. corn flakes

Place sugar and syrup in pan!. Bring to boil and boil one minute!. Add peanut butter!. Stir until melted!. Stir in cereal!. Drop by teaspoons onto wax paper

CORN FLAKE COOKIES
1 c!. sugar
1 c!. margarine
1 tsp!. Soda
1 tsp!. cream of tartar
1 1/2 c!. flour
1 tsp!. Vanilla
2 c!. corn flakes

Cream sugar and margarine!. Add and mix soda, cream of tartar, flour, vanilla and corn flakes!. Roll cookies into a ball!. Press with a fork and bake at 350 degrees!.

OVEN FRIED CHICKEN PARMESAN
1 c!. crushed corn flakes
2/3 c!. grated Parmesan cheese
1/4 c!. chopped parsley
1 clove garlic, minced
2 tsp!. Salt
2 1/2 to 3 lb!. frying chicken
1/2 c!. melted butter or margarine

Combine crumbs, cheese, parsley, garlic, and salt!. Dip chicken in butter; roll in crumb mixture!. Place pieces of chicken, skin side up, untouching, on jelly roll or other shallow pan!. Bake at 375 degrees for 45 minutes or until tender!. Turning is not necessary!. Makes 4 servings!.

MILKY WAY DESSERT
1 c!. crushed cornflakes
1 roll refrigerated chocolate chip cookies
4 Milky Way Bars
1 c!. chopped nuts

Slice cookies into 1/4 inch slices!. Place slices in bottom of ungreased 13 x 9 inch pan!. Press to make a crust and bake at 375 degrees for 12 to 15 minutes!. When brown, remove from oven, cut candy into slices and place evenly over crust!. Bake 2 to 3 minutes!. When candy is soft, spread over crust and sprinkle nuts and cornflakes over!. You can crush them up like for a breading on chicken or pork chops!. You just crush them put in some kind of seasoning, salt,pepper, whatever you like and roll the meat in egg and then in the coating and bake!. Www@FoodAQ@Com

You could use them on top of a dish mixed with a little cheese, salt and pepper and bake!. A bit like a crumble but with cornflakes!.Www@FoodAQ@Com
