Making chicken broth?!


Question: Making chicken broth!?
I saw a recipe for making soup by taking the leftover "frame" from roast bird and putting it in a crockpot and covering it with water and cooking for ever to make the broth!.
Has anyone tried this!? Do you think this would be good!?
I have a leftover roasted chicken I wanted to try this with!.

Agree with everyone above!. I like strip the carcass of any 'decent' meat and set aside the best to ad in later so it doesn't over cook!. I also add the onion carrots celery that can be thrown away with the bones at first to maximize flavour, and add the veg I will eat according to cook times and personal taste!. also I like to add red split lentils and some pasta!.!.!.real home cooking and hearty!.!.!.enjoy and play!.!.!.I think soup making is an art form and each one can be so unique!Www@FoodAQ@Com

I do it all the time!. Toss the whole leftover carcass in a pot,cover with water, and slow boil it for a few hours, reducing liquid by at least half!. Toss a few vegetables in there too- especially if you roasted them with the bird!. also add any of the drippings from roasting the bird, as this will add good flavor!.I usually add some salt, pepper and a few other spices if I am going to be making chicken soup!. Poultry Spice is simple, rosemary adds a great flavor!. If you are making soup, after it has boiled down, pour the whole mess into a strainer, letting the liquid pour into another pot, then set the solids aside to cool, once they're cool, you can pick any remaining meat from the bones to add to your soup!. I would add to the chicken frame a couple of scrubbed carrots chopped into chunks, 1 large onion quartered and three stalks of celery roughly chopped!.
Simmer gently for about an hour!.

In your case remove the carcase, and strain the stock, and discard the veggies!.

Yes this can be done as long as it has some chicken left on it and even better if it has some of the skin left!. Just add 1 stalk of celery and 1 carrot all cut up, and sliced onion, parsley, 1 tsp salt, 1/2 tsp pepper, and 41/2 C cold water!. Simmer for 45 minutes!.Www@FoodAQ@Com

We do this whenever we have a turkey!.
You have to do it while the carcass is fresh or frozen!.
Then take out the bones & pick off any bits of meat (to keep)!.
The broth can be cooled to pick off the fat afterwards!.Www@FoodAQ@Com

That should work well!. I usually save the wing tips and other parts we don't eat in the freezer until I want to make stock and I add them to the pot!. I also do this with turkey carcasses!.
