Because smoked salmon is usually put in a (salt, brown sugar, and other spice) cure before it is smoked not to mention the smoke flavor!.Www@FoodAQ@Com

Before you smoke salmon or any other fish or meat, you marinate it or "brine"it to add flavor and moisture!. The wood smoke also imparts flavor!.Www@FoodAQ@Com

Smoked Salmon takes on the flavours produced by the smoking process!.
The type of wood used can alter the flavour also!.Www@FoodAQ@Com
