We love aubergines, too! My mum used to make an easy, all-in-one aubergine bake!. Served with rice and a salad, it was always a lovely meal!.

Ingredients:
aubergine (1 large or 2 small)
1 can chickpeas
1 can tomatoes
1 onion, minced
1 - 2 cloves garlic, minced
salt, to taste
sugar, dash
extra virgin olive oil, drizzled

For garnish:
1 handful fresh parsley and / or basil, roughly chopped

Method:
1!. Pre-heat oven to 180C!.
2!. Peel and cube aubergines!.
3!. In a baking dish, mix all ingredients!. Use salt and sugar to season!. Top with drizzled olive oil!.
4!. Bake in oven for 30 - 45 minutes, or until aubergine is cooked through!.
5!. Garnish with chopped fresh herbs!.

A lovely little Russian dish called (this spelling will be wrong) bakla-jan-eh-kra or Aubergine caviar

(No idea how to spell, but anyway phonetically will have to do!.!.!.)

1) Prick two aubergines with a fork and roast in the oven at 180C for 25mins to cook the flesh (If you don't prick they will explode)!.
2) Leave to cool and then remove skins and stalks
3) Chop 1 large onion and gently fry in olive oil until softened
4) Chop the aubergines into bite-sized chunks and add to the onions
5) Continue to gently fry for five mins
6) Take off heat and add three-quarters of a tube of tomato puree
7) Add the juice of a lemon and stir in
8) Add one spoonful of white wine vinegar and stir in
9) Salt and pepper to taste
10) Leave to cool
11) Serve on good fresh crusty buttered bread!.

2 other things - for some strange reason this tastes much better when served on buttered bread than by itself!. It also tastes considerably better when it's been allowed to cool off - don't be tempted to eat hot!.

I love them too!. The classic aubergine dish is moussaka!. You don't have to make it to exactly the classic recipe!. Beef mince instead of lamb or a vegetarian version are possible alternatives!.

You can simply fry aubergine in oil and butter!. Salt the sliced aubergine, wash and dry!. (Salting removes bitter components!.) Equal quantities of grapeseed oil and butter in a pan!. Fry until golden in the heated fat!.

You can also make aubergine "caviar" but I don't know the recipe!.

I make aubergine bake!

What i do is slice the aubs about a cm thick and then oil an oven tray place them on, brush with more oil on gas5 for about 20mins (check them before 20mins is up though!) They should be soft when theyre ready!.

Now while the aubs are in the oven slice 2 large onions but leave them in long bits, dont dice them!. And fry them for a bit till golden, this will get the yummy flavour out! Sometimes i add a wee bit of redwine vinegar and itll really sizzle n steam so be careful! Then add a tin or two of chopped tomatoes and heat that all through!. Get a deep oven dish and line the dish with the aubergines slices, just to cover the bottom on the dish!. Then pile on the hot tomatoe onion sauce and then grate a load of cheese on top!. Then repeat, ie layer the aubergine, tomatoe sauce and grated cheese etc until you fill the dish to the top!. Finish it off with some more grated cheese(lots!) and cover with tinfoil!. Put in the oven for about 20mins gas 6 and voilar! A yummy rich aubergine bake! Very comforting and very tasty, perfect for those cold nights!Www@FoodAQ@Com

Try a Spanish recipe for a sauce called "pisto"

1 onion
1 marrow
1 aubergine
3 peeled tomatoes


You cut into pieces the onion, the marrow and the aubergine, and cook them together with a little oil for a short time!. You then add the tomatoes, some salt, cook them for about 20 minutes, and it's ready!.
You can use this sauce with any kind of meat or eggs, or even on a toasted bread slice!.


Another recipe:

You cut the aubergine into slices, salt them and dispose them over a paper towel (i'm not sure that's the right word, but i hope you understand what i mean)!. After a while you batter them with flour and you fry them in abundant olive oil!. EASY and DELICIOUSWww@FoodAQ@Com

Stuffed aubergines!. My version is!.!.!.!.

pan fry some onion and minced beef, add veg of your choice (tomatoes, mushrooms, etc etc), add the scooped out aubergine to this so you don't waste it!. Fill aubergine with this, top with cheese and put in the oven for about 20-30 mins!.
