i've made a lovely tuna fish cake the other day:
4 spears of sping onions, finely chopped!.
1 large boiled and then mashed potato with a little milk
1 egg
1 large tin of tuna in brine/water
4 tbsp of sweetcorn (optional)
salt and pepper to taste
turmeric and paprika or any herbs or chilis you want (optional)
breadcrumbs
oil or butter to fry
mix all the ingredients except for the oil and breadcrumbs in a bowl , season very very well and mix well until well combined!.
shape in round discs ( smaller than a burger )
then dip in breadcrumbs
Fry on each side in hot oil for 2 minutes on each side!.
i also love a good tuna bake:
heat the oven on 180C/Gas 6, boil enough penne or whatever pasta you have for 12 minutes, adding small brocolli florets to the last 3
minutes!. drain and put in an oven proof dish, empty a tin of tuna in water/brine and lightly mix with as much cheddar cheese as you like ( i love it cheesey!) then mix a can of condensed cream of mushroom soup with a 1/4 pint of milk and pour all over the pasta dish!.
lightly crush a bag of ready salted crisps then open it and tip it on the top of the dish!.!. distributing it evenly then add some more cheddar!.
pop it in the oven for 15 minutes!.!. and enjoy the lovely crunchy crust and the deliciously melted taste of cheese, brocolli and tuna!

Shredded 7 oz tin of tuna (in brine, not oil) chunks mixed into 1 litre of fluffy mashed potato!. Add two teaspoons of English mustard powder and 4oz of shredded strong cheddar cheese and a tablespoon of peas!.
Stir the lot together well then put a knob of butter on top and and microwave for a couple of minutes until the butter has melted in!. Serve hot with buttered chunky bread and tomato sauce!.
Takes about 20 minutes!. Absolutely scrumdelicious with a glass of chablis!.Www@FoodAQ@Com

Try fresh tuna steaks but remember that they need hardly any cooking!. Fry in a hot pan for 1 to 2 minutes on each side, depending on thickness, place on the side to rest for a further 2 minutes and serve with herb butter and a wedge of lemon, potatoes and a suitable vegetable or salad!.
Tuna steaks should be served rare, verging on "blue"!.Www@FoodAQ@Com
