Where can i buy bread flour (like the bakery uses, for bread)? Fort Lauderdale area?!
i would like to buy different flour, like what the bakeries use to make their bread!. i don't like the "bread flour" offered at the supermarket, I think there are special brands that are not offered to the general public, or dough conditioners or something they use to get a better result!.
if it's a restaurant supply, it has to be "open to the general public"!.
i can travel anywhere from north fort lauderdale to south miami!.
thanks if you can help!
(i know maybe i should post this in the "local" question part, but i wanted to get answers from experienced bakers, might be more likely in the food section of what product or brand i need)
thanks in advanceWww@FoodAQ@Com

As a retired chef and part time baker, I can tell you from many years of experience it is the same flour you get in the supermarket!. The difference is labeling and packaging!. Using bread flour instead of AP flour does take a little more work but, is so worth it!. Even though bread flour has more gluten than AP it still needs to be worked to get the gluten to make the dough elastic and smooth!. The reason you want your dough elastic is so when the yeast gives off Co2 , the elasticity keeps the bubbles from popping and giving you a flat or heavy loaf of bread!. If you insist on commercial packaging and sizes of bread flour go to Smart and Final or United Grocers!. Both are public restaurant supply stores anyone can shop at!. Good Luck to you!.Www@FoodAQ@Com
