Make sure you have a large Dutch oven with a tight fitting to make these!. A lg Dutch oven is like 7 to 9 quarts in size!. You can use anything that is deep enough to fit the rolls and has a lid!. They need lots of room to braise!. Of course you can vary this recipe many ways, by using different types and combinations of ground meats!. Original recipe just used all beef, but can add part veal!.
1 large green cabbage
1 pound ground chuck
1/2 pound ground veal
3/4 cup raw white long grain rice
1 stick butter (used 1/2 margarine)
1 bunch Italian parsley
1 yellow onion
4 cloves garlic
2 tsp salt
1 tsp Worcestershire sauce
1 tsp black pepper
1/2 tsp cayenne pepper
1 quart beef broth (or water)
1 cup water
1 can crushed tomatoes (28 oz) (Used tomatoes with green peppers and onions)
(added 1 tsp) italian spice
*Should cook for 2 hours at 350 degrees F!., but check after an hour and add more water if they seem to dry)

I made them a couple of months back for the first time!. First combine your ground beef with cooked rice, minced onion, salt and pepper!. Now here's a tip that will really help you!.!.!.core your cabbage and stick the entire head into a pot of simmering water!. As the leaves blanch, they will fall off!. (I tried getting the leaves off without boiling, and they kept tearing on me)!. Take a pair of tongs, and lift out the leaves that fall off!. Set in a colander, and let them cool!.
When your leaves are cool enough to handle, trim the thick vein at the base of the leaf!. This will help the leaf roll up easier!. Take a heaping tablespoon of meat (Or more if it's a very big leaf), and roll the way you would a burrito!.!.!.the side closest to you, fold in!.!.then the 2 sides on right and left!.!.then roll to seal!. Place seam side down in a baking dish!. I like to use tomato soup!. One large can, or 3 small ones, undiluted!. Cover with foil and bake for 1- 1 1/2 hours, basting occassionally!.Www@FoodAQ@Com
