Anybody have any good vegan recipes?!
My whole family has turned vegan because heart disease runs on my husbands side of the family!. We were meat eaters for 40 years but in the last year we decided that cutting out meat would be healthier since my husband is only 40 years old and has already had a stint put in his heart!. If anyone has unique vegan recipes other than just plain steamed vegetables let me know!.!.thanks!Www@FoodAQ@Com
Answers:
Color full veggie sauté:
2 med red peppers julienned
2 med green peppers julienned
2 med zucchini julienned
4 med carrots julienned
1 tsp olive oil
4 cups thinly sliced cabbage
1/4 tsp salt
4 tsp cider vinegar
1/4 cup water
1 tbsp sesame seeds!.
In a large skillet, sauté the peppers, zucchini, and carrots in olive oil, for 5 min!. Add the cabbage, salt and pepper, sauté 1 min longer!.
In small bowl combine vin and water, pour over veggies!. Cook and stir for 2-3 min or until heated thru!. Sprinkle with sesame seeds!.
****For some protien add some beans or tofu if you like it!.

Hot Orzo Pasta Salad:
Boil some orzo while waiting chop some zucchini and yellow crooked neck squash kinda small!. Add the veggies the last 3-4 minutes of boiling!. Drain and transfer so a serving dish!. Add some butter, seasoned salt, and shredded parm cheese!. Mix and enjoy!.

Cold Orzo Salad:
Boil some orzo pasta, drain and cool!. Add some chopped red onion, roma tomatoes, corn, feta cheese, and Italian dressing!.

Warm Green and Potato Salad:
1 lb small red, white or yellow new potatoes
12 oz fresh green beans trimmed and cut into 1 inch pieces (approx 2 cups)
1/4 cup dried tomatoes in olive oil drained, and chopped
1/3 cup bottled parmesan or Italian salad dressing
4 cups pre-washed Italian salad greens
4 slices bacon, crisp cooked and crumbled (optional)
1/2 or 1/4 the potatoes, boil with the beans in lightly salted water until tender!. Drain!.
Return to the pan and add remaining ingredients

My Dad is on a vegan diet with no sugar and so on for cancer treatment and prevention!.
He was a beef and tater guy for 50 yrs and it has been hard for him too!. Try organic chicken 1 or 2 times a week and fish a couple of nights a week as well!. Try to stay away from bottom feeding fish as much as possible as they collect all the yucky stuff!.
also try to eat more while grains, not just whole wheat to help you feel full!.
And maybe have one night a momth where a nice steak or something like that is okay to "splurge" on, as long as it is only 1 portion sized serving!. also a really awesome cookbook to buy is http://www!.amazon!.com/Housekeeping-Step-!.!.!.

1 large onion, coarsely chopped (1 cup)

1 cup uncooked regular long-grain rice
1 can (14 ounces) vegetable broth
1 cup frozen whole kernel corn
2 tablespoons Worcestershire sauce
1/8 teaspoon ground red pepper (cayenne)
1 can (15 to 16 ounces) black-eyed peas, rinsed and drained
1 can (14 1/2 ounces) stewed tomatoes, undrained
1!. Heat oil in 10-inch skillet over medium-high heat!. Cook onion, bell pepper and garlic in oil 3 to 5 minutes, stirring occasionally, until vegetables are crisp-tender!.

creamy veggie casserole
1cup rice
1 1/2 cups water
1 can cream of broccoli soup
1/2 bag frozen mixed veggies (you choose the type )
seasoning to taste
Mix all ingredients together place in a casserole dish and bake till bubble and rice is cooked, can top with cheese/soy cheese for the last few minutes or even bread crumbs!. you can also play with different types of seasoning to add to the casserole before you bake it, (suggestions: italian seasoning, herbs d province, or even spicy cajun or tex mex)
also try Grilling your veggies with a lithg itailan dressing or other vinagrettes to give it a nice change, stemaed veggies can be so boring!. my favorite grilled veggie is acorn squash with Garlic
CUt an acron squash in half, turn cut side down on a plate with a little water and then microwave for about 1-2 minutes (steams it) then remove and place on grill skin side down , cut side up and fill well of squash with a fe wtablespoons of olive oil or other heart health oil or butters and some fresh garlic and cook on grill till cooked through!.

I am so glad you decided on your own and not consult you cardiologist
I understand the denial reaction to your families genetic defect!.!. My mom passed at 83 several heart attacks my dad at 60 failed t recover from an aortic ream my older brother at 62stints and quad BP and cancer I had my quad by pass at 65 because of a back injury!.!.
Nothing like a radical change in life style to upset your bowels and make more stress!.!.
and without guidance you may do more damage!.!.
