Here's what I would do:
1!.) Amuse bouche - I would suggest a esspresso cup with one shot of something like Beetroot Gazpacho or a Mushroom Froth with chestnut!.

2!.) Griddled Fois Gras with peach chilli sauce, served with toasted brioche and a glass of Tokay!.

7!.) Good freshly ground strong coffee, or fresh tea leaves served in the pot!. Serve petite four with this course

I would suggest this Menu gastronomique should take about three to four hours to eat!. Do not serve to much trout or chatebriand as the guest will never get to the end!.
