Cheater's chicken parmesan - mix 1 cup breadcrumbs w/ 1/2 cup parmesan cheese!. Lightly coat chicken breasts with mayo, then press into the breadcrumb mixture, until crusted on both sides!. Cook at 400 degrees until done, turn once, when browned!. Serve w/ boiled/mashed potatoes or pasta, and veggies!.

Pasta Arrabiatta
Heat a little olive oil (or spray) in a pan, with minced garlic and red pepper flakes!. Add ground beef (hamburger) and cook until no longer pink!. Add a can of tomatoes (or fresh ones, peeled, seeded and diced), and simmer for at least 20 mins (up to 40) allowing liquid to evaporate and sauce to thicken!. While sauce simmers, cook spaghetti according to pkg instructions!. Drain!. Toss sauce together w/ pasta, and serve (good with a salad, garlic bread)

Roast chicken and veggies for one - preheat oven to 375 degrees, sprinkle chicken breast/s with salt and pepper!. Chop carrots and potatoes into similar sized chunks, toss with a little olive oil, salt, pepper and fresh herbs if you want (rosemary or thyme)!. Place in an oven dish, roast for about 30/40 mins (longer if chicken is on bone, or if it is still pink) until the chicken and veggies are done!.

SWEET AND SOUR PORK CHOPS

3 lbs pork chops
4 onions, diced
1 can pineapple chunks
1/2 cup vinegar
1/2 cup brown sugar
4 tablespoons soy sauce
1/2 teaspoon freshly grated ginger
1/4 cup cornstarch
1 1/2 cups water
1 can water chestnuts
1 green bell pepper
salt and pepper, to taste

In a dutch oven or large skillet, brown the pork chops!. Add onions, juice from the pineapple, vinegar, soy sauce, sugar, ginger, salt and pepper!.
Cover pan and simmer for 1 hour or until pork chops are tender!.

Set pork chops aside!.

Combine cornstarch and water, then stir into pan; add water chestnuts, bell pepper, and chunks of pineapple!. Bring to a boil and cook until sauce has thickened to desired consistency!. Add pork chops and cook until heated through!.

Serve over white rice, pasta, or noodles!.

fish:
rub a little olive oil on it
sprinkle old bay seasoning on it
top it off with a stewed tomato on each piece

put it in the oven at 350 degrees and bake it for 20 mins
any plain fish

1 package alfredo noodles!.

easy dessert
2 instant french vanilla puddings
mix as directed for pie
1/4 cup peanut butter
powdered sugar
take the peanut butter and powdered sugar and mix together until it makes crumbs
take a graham crust pie and sprinkle the crumb mixture on the bottom!.!. then pour the french vanilla pudding over that!.!.!. top it off with whipped topping

cheesy dog casserole
1 pound elbow macaroni
Salt
2 tablespoons extra-virgin olive oil, divided
1 package beef or pork hot dogs, chopped into 1-inch pieces
1 tablespoon butter
1 medium onion, finely chopped
2 tablespoons all- purpose flour
1/2 cup beer, 1/3 of a bottle - whatever you have on hand, chicken broth can be substituted
2 cups milk
Pepper
1 rounded tablespoon spicy mustard
2 rounded tablespoons ketchup
3 cups yellow sharp Cheddar, shredded, divided (Buy preshredded cheese!. You will need 1 1/2 sacks of 10-ounce packages!.)
Boil a large pot of water for macaroni!. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness!.
Preheat broiler and set rack 12 inches from heat!.

While pasta works, heat a large deep nonstick skillet over medium-high heat!. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total!. Remove the dogs with a slotted spoon to a paper towel lined plate!. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter!. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute!. Add beer and cook off completely, 1 minute!. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup!. Lower heat and add 2 cups of the cheese!. Stir to melt, 1 minute!. Adjust mustard, ketchup, and salt and pepper, to your taste!.

Drain pasta well!. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese!. Melt and brown cheese under broiler, 2 minutes!. Serve!.

AUSSIE MEATLOAF
1 pound lean ground beef
1 pound sausage, casings removed
1 cup fine breadcrumbs
2 medium onions, chopped fine
1 tbsp curry powder
1/2 cup water
1 tbsp parsley, chopped
1 egg, beaten
1 clove garlic, crushed
1/2 cup milk
Salt and pepper to taste

SAUCE
1 onion, chopped very fine
1/4 cup water
1/2 cup ketchup
1/4 cup dry red wine OR beef stock
1/4 cup Lea & Perrins worcestershire sauce
2 tbsp vinegar
1 tbsp instant coffee
1/4 cup brown sugar, packed
1 ounce margarine
2 tsp lemon juice

Instructions:
MEATLOAF
Combine meats, breadcrumbs, onions, salt, pepper, garlic, parsley, curry and egg in large bowl!. Mix well!. Mix milk and water and add to meat mixture a little at a time until smooth but firm!. Shape into loaf and put into greased baking pan!. Bake 30 minutes at 375 degrees F!.

SAUCE
Saute onions in margarine until golden and add all other ingredients!. Bring slowly to a boil, lower heat and simmer 10 to 15 minutes!. (great with ribs or chicken)!. After loaf has cooked for 30 minutes, pour half of the sauce over the meat, return to oven and bake 45 minutes more, basting often with remaining sauce!. Serve loaf hot in thick slices with remaining sauce!. also makes great sandwiches!.
