What side dishes and dessert?!


Question: What side dishes and dessert!?
This week I am going to make Chicken Breasts, what do you think I should make as side dishes (I need 2 or so!) and a dessert!. And I know I'm asking a lot, but also if you can think of like some drinks that aren't just some pop poured in a glass (but I do have little kids, so I can't serve alcohol!) Thanx so much!!!!

Hi, these are all really easy and kid friendly!. Sorry I don't have any drink suggestions except to mix punch and sprite!.

Hash brown casserole

1-32 oz!. bag ore Ida hash browns
? cu melted butter
? cup chopped onion
1 can cream of chicken soup
1 cup sour cream
1 cup grated cheddar cheese
2 cups corn flakes crushed

Use ? cup butter & cook onions until tender!. Mix onion & butter, potatoes (thawed), soup, sour cream, & cheese!. Pour into casserole!. Bake 1 ? hr!. at 325 degrees!. Covered with foil for 1 hour then remove!. Add corn flakes mixed with ? cup!. Margarine over top & bake remaining ? hour!.
Here's the recipe for potato casserole:

32 oz!. pkg!. of frozen hash browns (sometimes these come in square-shaped patties!. Break them up before mixing in!.)
1 can cream of mushroom soup
1 can cream of chicken soup
1 8 oz!. sour cream
2 cups sharp shredded cheddar cheese
1?2 stick melted butter

Ritz cracker crumbs
Butter

Melt additional 3/4 stick butter and mix w/cracker crumbs to cover
casserole!. (Around one and a half tubes of
crackers to make enough to cover the casserole good!.)


Just mix it all up in a big bowl, pour into greased casserole dish,
cook for around 30 minutes covered, then sprinkle w/crumbs and cook
another 15 minutes or so until it all bubbles & is browned on top!.!.!.!.350
degrees!.
Corn Casserole
RECIPE INGREDIENTS:
1 16-oz!. can cream of corn (undrained)
1 16-oz!. can sweet corn (drained)
1 box corn muffin mix
1 cup milk
1 egg
1!. Mix ingredients together in a large mixing bowl!.

2!. Pour into a greased casserole baking dish!.

3!. Bake at 375 degrees for approximately 35 to 45 minutes or until top is golden brown!.
Au gratin Potatoes

1 bag of frozen chopped hash browns
1 can of cream of chicken soup
1 cup of sour cream
1 cup of cheddar cheese

Mix in a bowl and put in a cake pan!. Top with cornflakes and bake 350 degrees for 30 minutes!. These are yummy potatoes!

Easy Cheesy Crockpot Potatoes

These cheesy hash browns are sure to please your whole family!

1 (2 lb) bag frozen hash browns
? cup sour cream
10 oz shredded cheddar
4 oz shredded Monterey jack cheese
? cup butter or margarine
? cup chopped onions
1 can cream of chicken soup
Paprika, optional

Mix all ingredients in big bowl, saving part of cheddar to sprinkle on top!. Cook in slow cooker about 4-5 hours on low!. Then sprinkle remaining cheese and paprika, if desired, on top!.

NO BAKE PEANUT BUTTER COOKIES
1 c!. sugar
1 c!. light corn syrup
2 c!. peanut butter (18 oz!.) jar
4 c!. corn flakes

Place sugar and syrup in pan!. Bring to boil and boil one minute!. Add peanut butter!. Stir until melted!. Stir in cereal!. Drop by teaspoons onto wax paper

Cake Mix Brownies
2 eggs
1/3 c!. water
? c!. margarine
1 c!. peanut butter
1 pkg!. yellow cake mix (any other flavor could be used)
2 c!. semi sweet chocolate chips

Preheat oven to 325 degrees!. Grease 9x13 baking pan
In large bowl, cream together eggs, water, margarine and peanut butter!. Stir in cake mix and blend well!. Finally, fold in chocolate chips!. Put mixture in baking pan and into preheated oven for 25 minutes or until toothpick inserted in middle comes out clean!. Cool 30 minutes then cut!.

Marbled Eggs

eggs (older eggs desired, so they are easier to de-shell without removing bits of the cooked egg with the shell)
salt
water
tea bags

Place desired amount of eggs in a saucepan and fill with water enough to cover the eggs!. Add one shake of salt per egg!. Bring to boil!. Lower the heat and let simmer 10 minutes!.
Drain the water and run water over the eggs until cool enough to handle!.
Crack each egg until they are covered with cracks, but DO NOT YET PEEL THE SHELLS OFF!.
Return the eggs to the saucepan and cover with water again!. Add teabags, one per two eggs!.
Bring to boil and let simmer for one hour!. Remove from heat and let sit for one or two hours!.
Remove shells!.

There will be tea-colored lines, where the shell cracks were, on the egg!. This gives the eggs a "marbled" look!. They make a pretty dish as is or deviled!.

Personally i think you should serve maybe some green beans and a salad!. For dessert maybe some pudding for dessert!. I think your kids should pick the drink!. I think veggies go best with chicken!. (i'm a kid!.)Www@FoodAQ@Com

Without knowing the seasonings on the chicken or sauces it's hard to say!.!.!. but since chicken breasts on their own don't have a huge stand-out flavor (even though I love them just as much as the next person), I'd go with some high flavor, yet lighter in the stomach, side dishes!. For instance, garlic green beans, roasted root vegetables with fresh herbs, red cabbage and apples is a great kids recipe since it's so sweet and a playful color (purple at the end of cooking), or minestrone soup!. The soup is comparatively a bit heavier than the others because of the beans, but when served in cup sized portions would work very well with chicken I'd imagine (tomato based dishes seem to pair well with chicken breast)!. In terms of a family dish the soup makes tons of servings, freezes well, and is inexpensive on a per serving consideration!. For a carbohydrate centered side I also added a homemade marinara sauce that is a bit more sweet than salty like many commercial marinara sauces, I'd imagine that would make it more popular with young kids (if yours are young)!.

For a dessert, do you prefer the real deal or more fruit-oriented desserts that won't make the kids bounce off the walls quite as much!? I'll put two of each in for you: homemade apple sauce and caribbean bananas for the more natural fruit desserts and rhubarb cake and cinnamon spiced blueberry cake for the real deal desserts!. If you can't tell I'm bias towards fruit anything, but I also believe it makes a nice refreshing flavor in dessert after heavy protein main dishes like meat, especially chicken which has that softer flavor!.



Green Beans with Garlic Dressing

2 lbs green beans, ends trimmed
1/2 cup sliced or chopped almonds (optional)
1 tbsp chopped fresh thyme (or use about 1/2 tsp of dried)

Dressing -
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
1 tsp Dijon mustard
2 cloves garlic, crushed
1/2 tsp lemon zest
1/2 tsp sea salt
1/4 tsp ground black pepper

To prepare the beans, blanch the beans in a large pot of boiling water for 4 minutes or until crisp-tender!. Drain well!.
Combine all ingredients for dressing in a small bowl, stirring with a wire whisk!.
Place beans, almonds, and thyme in a large bowl, add dressing and toss well to coat!.

Serves 4-6


Roasted Root Vegetables with Fresh Herbs

Ingredients
?2-3 red potatoes, cut into chunks
?1 large yam, peeled and cut into chunks
?2-3 Jerusalem artichokes, cut into chunks
?2-3 carrots, peeled and cut into chunks
?1-2 beets, peeled and cut into chunks
?? tsp sea salt or Herbamare
?2-3 tbsp fresh herbs (rosemary, thyme, savory)
?2-3 tbsp extra virgin olive oil
?Fresh chopped parsley for garnish

Preheat the oven to 400 degrees!. Place the cut vegetables, salt, herbs, and olive oil into 9x13 inch glass baking dish; toss well!. Place, uncovered, into a preheated oven and roast for 35-45 minutes or until tender!.


Red Cabbage and Apples

Ingredients
?1 tbsp unsalted butter
?1 onion halved; thinly sliced
?? cup brown sugar
?2 tbsp red wine vinegar
?1 pkg (10 oz!.) sliced red cabbage or one small head of red cabbage
?2 apples peeled, cored, and diced (1/2 inch)
?? tsp salt
?? tsp ground allspice or cinnamon
?? cup water

In a large skillet, melt butter over medium heat!. Cook onion 6 minutes or until wilted!. Add cabbage, apples, sugar, vinegar, salt, and allspice/cinnamon!.

Stir in H2O, bring to simmer!. Cook covered for 15 minutes or until tender, stirring twice during cooking



Minestrone Soup

Ingredients
?1 cup navy or ? cup kidney beans, rinsed
?12 cups (3 qrts) beef or chicken broth (96 oz)
?4 large carrots/2 cups baby carrots diced
?2 med!. Potatoes
?Small cabbage
?Lg!. can Italian tomatoes
?? onion
?2 zucchini
?1 tomato
?Green pepper
?1 stalk celery
?1 clove garlic, mashed
?Fresh chopped spinach
?1 cup spaghetti noodles, broken up

Cook navy or kidney beans in broth for two hours
Add carrots, potatoes, cabbage, and Italian tomatoes and cook for 1 hour
During last half hour, sauté and add the onion, add also the zucchini, fresh tomato, green pepper, celery, garlic, spinach, and spaghetti



Fresh Marinara Sauce

? 2-4 tbsp extra virgin olive oil
? 1 medium onion, chopped
? 4-5 cloves garlic, crushed
? 1 tsp sea salt or Herbamare
? 2-4 tbsp fresh herbs (thyme, rosemary, oregano, parsley, basil)
? 4-6 cups fresh chopped tomatoes (canned will do as well)
? ? cup tomato paste
? 1 tbsp sugar, whole cane sugar, or agave nectar
? 1-2 tbsp red wine vinegar
MethodIn a large skillet, heat the olive oil over medium heat!. Add onions and saute for about 5 minutes, being careful not to brown!. Add the garlic and salt, saute about 2 minutes more!.

Add fresh herbs, chopped tomatoes, tomato paste, sugar, and red wine vinegar; simmer uncovered over low heat for about 15-20 minutes!.

Caribbean Bananas

Ingredients
? 4 med!. bananas
? 2 tbsp margerine, melted
? 1 tbsp lemon juice
? ? tsp ground cinnamon
? 1/8 tsp ground cloves
? 1/3 cup packed brown sugar

Heat oven to 350 degrees!. Cut bananas crosswise in half then lengthwise in half!. Place cut sides up in square baking dish 9x9x2!.
Mix margerine, lemon juice, cinnamon, and cloves; brush over bananas!. Sprinkle with brown sugar!. Bake uncovered about 15 minutes or until bananas are hot!.


Homemade Applesauce
Recipe from Steven Skannes

Ingredients
? ?-1/2 cup water
? 10 lb apples, peeled, cored, diced into ?” to ?” cubes
? Sugar (sparingly, as needed)
? Cinnamon Stick, cardamom, nutmeg (optional – as desired)

Prepare as many of the apples as can fit in a large, heavy saucepan!. Heat over high heat until the water comes to a boil; cover, simmer for about an hour, stirring every 15 minutes to prevent burning!. The applesauce is done when any remaining chunks reach the desired softness!. If applesauce comes out too watery, leave uncovered and cook 10-15 minutes!.

NOTE: Choosing a variety of apples helps to create a unique flavor!. Honey crisp is good for a sweet and sour flavor, while Fujis will add a light sweetness to any applesauce!. Use Granny Smith apples for a sour flavor!. I find that adding a heaping teaspoon or two of vanilla really enhances the sweetness of applesauce and makes it seem more like a dessert!.


Warm Cinnamon-Spiced Blueberry Cake

Ingredients
Combine:
? 1 1/3 cups flour
? ? tsp baking powder
? ? tsp baking soda
? ? tsp ground cinnamon
? ? tsp salt
Combine:
? 6 tbsp unsalted butter
? 1 cup sugar
Add:
? 2 large eggs
? 1 tsp vanilla extract
? 2/3 cup sour cream

Bake 10 minutes at 350 degrees in a 9x2 round cake pan!. Add toppings, bake 30 minutes more

Topping:
? ? cups blueberries, rinsed and well drained
? 3 tbsp sugar
? 1 tbsp flour
? ? tsp ground cinnamon


Rhubarb Cake

Ingredients
? ? cup buttermilk
? 3 cups rhubarb, cleaned and cut into 1/2 in!. pieces
? 1 ? cups packed light brown sugar
? ? cup butter, softened
? 1 large egg
? 2 cups all-purpose flour
? 1 tsp baking soda
? ? tsp salt
? 2 tbsp cognac

Topping
1/2 cup sugar
2 tbsp butter, softened
2 tsp ground cinnamon

In small bowl, mix buttermilk w/ rhubarb and set aside!. In another small bowl, cream together brown sugar and butter!. Add egg, mixing well!. In large bowl, combine flour, baking soda and salt!. Add brown sugar mix and cognac!. Mix well!. Batter will be thick!. Stir in rhubarb mix until batter is creamy!. Pour into 9X13 in!. pan!.

Mix all topping ingredients with fork until well blended!. Crumble topping evenly over batter!. Bake at 350 degrees for 40 minutes!.Www@FoodAQ@Com
