What exactly are 'grits'?!

Question: What exactly are 'grits'!?
And how do you prepare them!? I know they're some sort of food usually eaten for breakfast in the US, but that's about the extent of my knowledge (I'm an Australian)!. Is there an ingredient called 'grits' or do you make them out of something else!? Am I correct in using 'grits' as a plural or should I say "What is grits"!?Www@FoodAQ@Com

A mealy white breakfast food made from corn!. Think of cream of wheat minus the sweetness and grainier!. They are usually served as a breakfast food in the US south, where I live!. It amazes me that people from other parts of the US don't even know what they are!. They go well with bacon, sausage, and eggs!. I have a friend that mixes up grits, bacon, scrambled eggs and butter in one bowl and eats it!. My mom also makes cheese grits, which is just grits baked with cheese, and serves it with fried fish!. I would like to know what vegemite tastes like, we don't have it here!.Www@FoodAQ@Com

Grits are made from the milling of corn kernels!.

The first step in the process is to clean the kernels; then, the grains are steamed for a short time to loosen the tough outer hull!. The grain kernel is split, which removes the hull and germ, leaving the broken endosperm!. Heavy steel rollers break up the endosperm into granules, which are separated by a screening process!. The large-size granules are the grits; the smaller ones become cornmeal and corn flour!.

Quaker makes 3 types of grits!. Regular grits leave the large granules intact!. Quick grits are passed over smooth rollers, which fracture the large granules into smaller ones!. This allows quick grits to cook faster!. Instant grits are precooked, and then dried again for packaging!. You "re-cook" them by adding boiling water!.
