Question: Something quick and yummy for dinner!?
I need an idea of what I can make for dinner for me and the hubby!.

He is allergic to tomato and he is lactose and tolerant and he hates pasta!. So any ideas without any of these things would be great thanks!.Www@FoodAQ@Com

Chicken and Dumplings

1 whole chicken
1 bay leaf
2 tsp garlic salt
6 black peppercorns
6 cups of water
1 cup baby carrots
1 package refrigerator biscuits (10 – 12)


Place chicken in crock pot and add everything except carrots!. Cook on low for about 8-10 hours!. Remove chicken and de-bone!. Pour broth into large pot on stove and heat until boiling!. Add carrots and cook for 30 minutes!. Thicken broth with cornstarch or flour mixed with cold water!. Tear refrigerator biscuits into 3-4 pieces each and drop into boiling broth, lower heat and cover!. Simmer for about 5 minutes, until biscuits puff up!. Add chicken and carrots, stir, and serve!.



Moms Accidental Teriyaki Pork Chops


This dish can be made more or less sweet according to taste!. It is just as good without the mushrooms!.

6 to 8 pork chops (boneless) or chicken
? cup butter or margarine
3 TBS olive oil
1 cup slice mushrooms (optional)
? cup sweet wine (White port wine is good)
? cup Kikoman Teriyaki Marinade
? cup corn syrup or sugar (optional), use only if you like your teriyaki a little sweet
1 - (10 ? oz) can white sauce or package white sauce made according to directions


In large skillet brown pork chops in 2 tablespoons melted butter and 2 tablespoons olive oil!. Remove chops from pan!. Add remaining butter and oil to pan drippings!. Add mushrooms and sauté until golden brown!. Add remaining ingredients except white sauce!. And simmer for 15 minutes!. Add white sauce and stir until smooth and completely blended!. Place pork chops in a 3-quart casserole dish and pour sauce over it!. Bake at 350F for about 1 ? hours or until chops are tender!.

Makes 6 to 8 servings!.

Serving suggestions: Goes great with mashed potatoes (use the sauce over the potatoes), pasta, or rice!.



Sweet & Sour Meatballs


1 lb ground beef
1 tsp garlic salt
dash pepper
1 sml can pineapple (optional)
1 can or jar sweet & sour sauce (I like the Contadina brand, but any will work)


Combine first 3 ingredients!. Make into meatballs, 1 to 1 ? inch wide!. Place in shallow casserole dish and bake in 350 F oven, for 20 minutes!. Drain of grease!. Bake for 10 more minutes!. Drain again!. Pour sauce over meatballs and bake for 15 minutes!. Serve over rice!. Makes 2-4 servings!.

Dijon Garlic Chicken Packets

SERVES 6

Ingredients
2 large carrots, cut into matchstick size
2 white potatoes, sliced very thin
1 large yellow onion, sliced thin
6 boneless skinless chicken breasts
1/2 cup Dijon mustard
1/4 teaspoon black pepper
1/4 teaspoon tarragon
1 tablespoon lime juice
1 tablespoon low sodium chicken broth
1 tablespoon garlic, minced


Directions
1IMPORTANT: Take care to slice the vegetables THINLY so that they will be cooked at the same time as the chicken when the timer goes off!.
2Tear off 6 pieces of foil about 12 x 16 each!.
3With the shiny side facing up, portion out the matchstick sized carrots in the CENTER of each piece of foil!.
4Then carefully fan out 4-6 of the thin potato slices atop each of the carrot 'piles'!.
5Then place one or two of the thin onion slices atop each of the carrot/potato 'piles'!.
6Then flatten out (with your meat mallet) each chicken breast JUST large enough so you can place each one atop each of the carrot/potato/onion 'piles' covering them completely; Everything should be nicely hidden under that chicken!
7Now for the sauce---Mix together the mustard, pepper, tarragon, lime juice, chicken broth and minced garlic!.
8With a small spoon, carefully add some of the sauce equally atop all chicken breasts!.
9Now you need to LOOSELY seal the foil packets but do NOT fold them flat!.
10By folding them securely, but loosely, you should have a pocket of empty space around the food inside; This is important because steam will be created and THAT is what cooks the food!.
11Place the sealed packets in a 13 x 9 pan or on a 15 x 10 jelly roll pan!.
12Bake them in a 400° oven for 30 minutes!.
13To serve, simply place each packet on a dinner plate and all your guests need to do is cut a slit in the foil to access their meal!

Baked Italian Sausage With Potatoes and Rosemary

Ingredients
6 Italian sausages
800 g kipfler potatoes, scrubbed and sliced
1 1/2 teaspoons paprika
1 rosemary sprig
4 garlic cloves, Unpeeled
sea salt, to taste
fresh ground black pepper, to taste
2 slices ciabatta
50 ml extra virgin olive oil
flat leaf parsley


Directions
1Preheat the oven to 200°C
2Slice the sausages into 4cm pieces and place in a large roasting pan!.
3Add the potatoes, paprika, rosemary, garlic cloves, sea salt and pepper!.
4Tear the ciabatta into bite size pieces and add to the roasting tray!.
5Drizzle over the oil and gently toss to combine!.
6Place in the oven and cook, stirring occasionally, for 30-40 minutes or until the potatoes are tender and the sausages and bread are golden brown!.
7Top with continental parsley and serve with a green salad!.

Apricot Ginger Chicken

Ingredients
4 chicken breast fillets
1 tablespoon oil
2 cm fresh ginger, peeled and grated
3/4 cup apricot nectar
2 teaspoons dry sherry
1 teaspoon light soya sauce
1 teaspoon cornstarch
2 teaspoons water
1 green onion, chopped
1/4 teaspoon ground cumin


Directions
1Cut chicken into strips!.
2Heat oil in skillet, cook chicken until cooked through and golden brown!.
3Remove from skillet and keep warm!.
4To make sauce, combine ginger in skillet with apricot nectar, sherry and soya sauce!.
5Bring to boil, stir in blended cornstarch and water, stir constantly over heat until sauce boils and thickens!.
6Add green onions and cumin!.
7Serve over chicken!.

Grill some boneless skinless chicken breasts, or broil them!.!.!.you can use them plain or marinated in some balsamic vinegar and olive oil, or some terriyaki sauce; put together a great green salad with all sorts of veggies: carrots, cucumbers, radishes, green squash, onions, mushrooms, etc and slice the chicken over the salad!.!.serve with your favorite dressing and maybe some seasoned croutons!.!.!.!.

Lemon chicken scallopini with mashed potatoes made with non-dairy creamer!. Non-dairy creamer (the kind for your coffee, aka CREMORA) is AMAZING in mashed potatoes and it is lactose free!. Score!

Get a few red skin potatoes, some chopped garlic, and some cremora!.
Put 1 cup water into the microwave for 1 minute to heat!. At 3-4 heaping spoonfuls of creamora to the water and stir fully!. Add that to your potatoes with garlic, salt and pepper and mash!.

Lemon Chicken Scallopini

Dredge your chicken in a bit of *seasoned* flour and fry in olive oil!.
Doesn't have to be fully cooked, just browned!.
Store chicken in oven at 300 degrees!.

Put 1/2 cup white wine (optional) into pan and let cook for 1 minute until alcohol cooks out!. Add in 1 tablespoon olive oil and 1 tablespoon butter (1 tablespoon won't hurt him), garlic, and the juice from 1-2 lemons!. Add in some chopped flat leaf parsley if you have it!. Dried works ok too!.
Put chicken back into sauce and stir all around!.
Simmer on low for about 5 mins!.

Add in capers and diced tomatoes if you wish!.

Serve together!.

What I had for dinner last night - I used my crock pot, but you don't have to!.

Pork loin cooked in pork gravy, skillet potatoes, and fresh beans from the garden!.

In the crock pot, dinner was cooking while I was at work, and so tender it was hard to cut!. It won't be quite that tender in the oven, but should only take about 30 min, and in that time you can get the potatoes and beans done!.Www@FoodAQ@Com

In a baking dish put 1 cup of rice, i can cream of mushroom, fill up that can with hot water and pour that in!. mix till blended!. Add 4 boneless skinless chicken breast season them, lay them on top of uncooked rice mixture!. Cover with foil and bake for 50min at 350%!. Don't check it or open the oven till 50 min!. After that check the rice to make sure its soft if not put back in for 10 min at a time!. I add cheese on top but since he cant have cheese just omit!.
