Anyone got any good gluten free recipes?!
i am having to go on a gluten free diet as i get very very sick when i have wheat foods i just need to get really good recipes to make sure i stay on this diet!.Www@FoodAQ@Com

also, you want to get GF living and cooking for Dummies, they are both really good! And then get anything by Bette Haggman, her bread book is mandatory and then some, lol! I get a TON of ideas from Moosewood, by the way, you can get gf TVP from Bob's Red Mill, or just use meat!. Most TVP is wheat gluten, so don't use it without checking, ok!?

Hello, my husband is allergic to gluten so here we go:
Chocolate Flourless Cake
1/2 cup water
1/4 teaspoon salt
3/4 cup white sugar
18 (1 ounce) squares bittersweet chocolate
1 cup unsalted butter
6 eggs
1 tablespoon almond extract
Preheat oven to 300 degrees F (150 degrees C)!. Grease one 10 inch round cake pan and set aside!.
In a small saucepan over medium heat combine the water, salt and sugar!. Stir until completely dissolved and set aside!.
Either in the top half of a double boiler or in a microwave oven melt the bittersweet chocolate!. Pour the chocolate into the bowl of an electric mixer!.
Cut the butter into pieces and beat the butter into the chocolate, 1 piece at a time!. Beat in the hot sugar-water!. Slowly beat in the eggs, one at a time!.
Pour the batter into the prepared pan!. Have a pan larger than the cake pan ready, put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan!.
Bake cake in the water bath at 300 degrees F (150 degrees C) for 45 minutes!. The center will still look wet!. Chill cake overnight in the pan!. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate!.
The only thing I would change about this recipe is to add sugar to taste, I find I add a little less than the recipes!. This desert is RICH, it's not something you can eat a big piece of!. It's delicious and gluten lovers will eat it as well!.
If you live near a Walmart you are in great luck!. The Great Value brand (Walmart's brand) is making great strides to become gluten free friendly!. All mustards, pickles, ketchup, relish, steak sauce, all gluten free!!!! Look for Brownie Mix Delights Chocolate in their bakery aisle!. I've made this for several dinners and no one can tell they are gluten free! Delicious brownines!!
Oh, and for cookies, pb cookies are delicious even without flour!. I warn you to use parchment paper though:
Flourless pb cookies:
1 cup peanut butter
1 cup white sugar
1 egg
Preheat oven to 350 degrees F (180 degrees C)!.
Combine ingredients and drop by teaspoonfuls on cookie sheet!. Bake for 8 minutes!. Let cool!. Recipe doesn't make very many, so you could double recipe as you desire!.
I've used this recipe a lot and it's delicious!
Oh, and this bread is wonderful for a breakfast style food, especially if you like things like cinnamon bread:
Orange Walnut Bread
Preparation time: 20 min Baking time: 50 min
Yield: 12 servings (1 loaf)
Ingredients:
2 cups Gluten-Free Flour Blend (see below)
? cup sugar
? cup coconut milk)
? cup orange juice
3 tablespoons apple sauce plus 1 tablespoon coconut milk
2 tablespoons butter, melted
2 tablespoons freshly grated orange peel
1 teaspoon baking powder
? teaspoon baking soda
? teaspoon salt
? cup chopped walnuts
Directions:
Heat oven to 350°F!. Combine all ingredients except walnuts in large bowl; beat at medium speed until well mixed!. Stir in walnuts!. Pour into greased 8 x 4-inch loaf pan!.
Bake for 50 to 60 minutes or until toothpick inserted in center comes out clean!. Cool 10 minutes; remove from pan!.
FLOUR BLEND: Combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon Xanthan gum!. Use appropriate amount for recipe; store remainder in container with tight-fitting lid!.
Remember when baking that variety is VERY important!. The more flours you use the better!. Tapioca flour is the closest to wheat flour in texture, but rice flour is cheapest and carries the most flavor!. Xanthan gum can be expensive, but it's needed!. You will use xanthan gum in almost every single baking recipe out there!.
