110 g packed brown sugar

230 g creme fraiche
10 g sliced almonds, toasted (optional)
DIRECTIONS
Heat oven to 350 degrees F!. Place pear halves, cut side down, on cutting board!. Starting about 1/2-inch from stem end, make 7 lengthwise cuts in each half, cutting to the bottom but leaving pears slices attached at the stem end!. Arrange pear halves, cut side down, in an 11 x 7-inch baking dish!.
In small saucepan, combine sugar, water, apple pie spice and vanilla!. Cook over medium heat, stirring constantly, until sugar is dissolved!. Pour sugar mixture over pears!.
Bake covered, 40 to 45 minutes or until pears are tender, basting occasionally with sauce!.
Spread two tablespoons creme fraiche onto one side of each of 6 dessert plates; spoon one tablespoon sauce from pears on the other side!. With slotted spoon, place pear half in center of each plate; garnish with almonds, if desired!. Serve immediately!.

1 tbsp chopped fresh thyme
2/3 cup crumbled blue cheese
1/3 cup butter (no substitutions)
32 small strips prosciutto
Prep time: 25 minutes
Cook time: 5 minutes
Preheat oven to 400 degrees!. Place baguette slices on a baking sheet and bake for 5 minutes or until lightly browned!. In a small bowl, stir together pears, onion, olive oil, vinegar and thyme!. Let stand for 5 minutes, stirring occasionally, to marinate!. In a small bowl, stir together blue cheese and butter until smooth!. To prepare bruschetta, spread about 1/2 tablespoon of the blue cheese mixture on each toasted baguette slice!. Top with prosciutto and a small spoonful of the pear mixture!. Serve immediately!.

Fresh pear pie
1 recipe pastry for a 9-inch double crust pie
1/2 cup white sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon lemon zest
5 cups peeled and sliced pears
1 tablespoon butter
1 tablespoon lemon juice
Directions
Combine sugar, flour, salt, cinnamon, and lemon rind in mixing bowl!.
Arrange pears in layers in a 9-inch pastry lined pan, sprinkling sugar mixture over each layer!. Dot with butter!. Sprinkle with lemon juice!. Roll out remaining dough; cut slits for escape of steam!. Moisten rim of bottom crust!. Place top crust over filling!. Fold edge under bottom crust, pressing to seal!. Flute edge!.

Yeah you should be able to freeze them not sure how long for though, freezing fruit and veggies keeps in all of the vitmans and minerals too!.
