What is the best recipe for Courgettes?!


Question: What is the best recipe for Courgettes!?
I think thats how its spelt! I need to start eating more greens so bought some courgettes, I dont actually know what recipe is good!.

I personally love them cooked in a rich sun-dried tomato sauce (can buy in a jar or make a rich tomato/garlic sauce yourself) but have resorted to freezing them in small batches with a view to having them throughout the winter as I have grown too many!.Www@FoodAQ@Com

Courgette fritters with parmesan


Serves 4-6



Preparation time 30 mins to 1 hour

Cooking time 10 to 30 mins







Ingredients
450g/1lb small courgettes
4 tbsp flour
1 tsp ground cinnamon
?-? tsp cayenne pepper
2 eggs, beaten
90g/3oz fine breadcrumbs
45g/1? parmesan, finely grated
salt
olive oil and/or sunflower oil for frying
lemon wedges, to serve
mayonnaise flavoured with chilli and basil or coriander for dipping



Method
1!. Quarter the courgettes lengthways!. If they are very small and fresh from the garden use them just as they are!. If they are larger cut the quarters into lengths of about 7!.5cm/3inch!.
2!. Spread out in a colander and sprinkle lightly with salt!. Leave for half an hour then rinse and pat dry!.
3!. Mix the flour with the cinnamon, cayenne pepper and a little salt in a shallow dish or plate and place near the hob!. Set the bowl with the beaten egg next to it!.
4!. Mix the breadcrumbs and parmesan in another shallow dish and place next to the eggs!.
5!. Heat a 1cm/0!.5 inch depth of oil in a frying pan over a moderate heat until a cube of bread dropped into the oil frizzles moderately and browns in 45 seconds!. If it browns more quickly, the oil is too hot - add a little cold oil and turn the heat down!.
6!. Take a few of the courgettes at a time and coat each one thoroughly in the seasoned flour, shake off the excess then dip into the beaten egg!. Finally coat in the breadcrumb mixture and slip it gently into the oil!.
7!. Fry for about 4-6 minutes until golden brown, then drain briefly on kitchen paper!.
8!. Serve with wedges of lemon to squeeze over them as a side dish, or with a bowl of chilli mayonnaise for dipping!.

My husband's favourite is Philip's way in oil and garlic, but sometimes, especially with the very large courgettes (your spelling is spot on!) I slice them longways, scoop out the middles to make boats and pile in a stuffing to bake in the oven, alongside the chicken so you get a veg and stuffing carrier which you can eat, or with something more exicting, like bacon egg and mushrooms for a lunch meal!.

Everyone seems to have offered you good ideas! I usually do garlic, olive oil, lemon juice and sometimes a little balsamic vinegar - adds a nice flavour, especially if you're having mushrooms at the same time!

zucchini is known as summer squash or courgette!.

Broiled Zucchini
Set oven to broil and/or 550oF!. remove steam and blossom ends from 2 medium zucchini!. Cut each zucchini lengthwise in half!. Brush each cut side with melted butter or margarine, season with salt and pepper!. Broil zucchini with tops about 5 minutes from heat until tender, 10 - 12 minutes!. Makes 2 servings

If you fancy more of a salad type dish, you could use a peeler lenghtwise on the corguette to make long ribbons then dress them in lemon juice, olive oil, salt and pepper for a light side dish!. I like to add a little chilli too!. Leave them for an hour to marinade!.!.!.Www@FoodAQ@Com

Place them in rows in an oven proof dish with some lemon slices
Drizzle with olive oil
Add some whole garlic gloves
A touch of salt and fresh ground black pepper
Bake / roast for approx!. 40 mins on about 190!.

You could also add whole cherry tomatoes, onion wedges, peppers or aubergines!. Great mixed in with cooked pasta or as an accompaniment to pork chops / lamb chops / chicken breast!. Www@FoodAQ@Com

I like to slice mine thinly length ways and then cook them on a ridge griddled pain with olive oil- when off the grill sprinkle with lemon juice, rock salt and chopped up flat leaf parsely and serve with chicken, fish or griddle haloumi cheese- yum!Www@FoodAQ@Com

You can steam then, boil them, microwave them but my preference is to bake them with a little olive oil or to saute them with some butter for about 10 mins!.Www@FoodAQ@Com

They are great gently fried up in a butter/olive oil mix WITH mushrooms and garlic! Try to pick the smallest courgettes/zuchinni you can as they are less likely to go mushy when you cook them!.Www@FoodAQ@Com
