Question: Ideas for Fall Picnic Meal!?
To avoid another $100 meal, for our anniversary we had decided to go on a picnic, with the weather swaying around 65, its nice fall weather!. We have the sweet olde fashion basket, a nice blanket!.!.!. all the makings, besides a meal plan!.
We were thinking something classy, easy to make, and will survive the trek out there!.!.!. oh, and classy in the sophisticated way, not in the pb&j way!. Www@FoodAQ@Com

Yummy, extraordinary, and filling!. Can be eaten hot or cold depending on the fillings that you choose!.!.!.
Try this;

Bread Fritters;
Go to the bakery section of the store where you normally buy bread!.
Ask the baker for an "unbaked" loaf of bread!.
He must put exactly the same amount of dough he would have used to bake a bread with in to a plastic bag for you, and it would cost no more than a loaf of bread!.

Take that home and in a pot warm some cooking oil to about half the depth of the pot!. (Smaller pots take less oil than bigger ones do)!.!.!.
The oil temperature should be medium hot!. (About half the heat that the stove plate will go)

Now cut from the unbaked dough a slice about the size of your palm, and with a little water on your fingers (to prevent the dough from sticking to your hand), stretch out the dough in all directions until it is about the size of your whole hand including the fingers!. That brings the cutting of dough to about twice the size it was when you cut it!.!.!.!.

Now with care, drop the stretched out dough in to the hot oil!.
It would rise almost instantly!.
Fry it in the oil until it is golden brown all over, taking care to turn it over occasionally!.
It would be puffy and crisp when done!.

With a large ladle or sieve, scoop out the bread fritter and place on an absorbent kitchen towel to rid it of most of the oil still on it!.
Repeat this process until all the dough is done!.

These bread fritters are extremely filling, and can be cut open and filled with almost anything from grated cheese to minced meat to cold processed meat, syrup or jam!.
Try it, you will probably have some left over for two or three days, which you can take to work if you like!.!.!.!.
Bread fritters can be frozen and warmed up again if you have made too much, but the dough cannot, so rather make the whole lot and freeze what is left over for another day!. If you decide to freeze them, do so without a filling!. Fillings should always be made fresh!.
Finger snack variety;
By making the bread dough cutting about half the size when cutting off the raw dough from the batch, you can make smaller sized bread fritters and fill them with fancy foods like tuna mince or savory beef mince for buffet snack parties

This one is rather like a sweet pudding!. When done correctly it looks like plaited cakes in syrup and is rather addictive!.!.!.
Koeksisters
The secret of the crisp syrupy outside of koeksisters is that they are taken straight from hot oil and dipped into ice-cold syrup!. This seals the syrup outside and leaves the inside dryish in contrast!.
To make the syrup, mix a liter of sugar, 5 ml cream of tartar, 2!.5 ml tartaric acid and 5 ml vanilla essence or grated orange rind or cinnamon, or 1!.5 ml ginger with 500 ml of water!. Bring mixture to the boil and allow it to simmer for about 10 minutes or until syrupy!. Set syrup aside to cool!. It is advisable to make the syrup first and leave it overnight in the fridge!.
To make the batter, sift 500 ml flour, 10 ml baking powder and 5 ml salt into a mixing bowl!. Cut or rub 70 ml of margarine or butter into the dry ingredients!. Beat an egg thoroughly and add it to 80 ml of milk!. Add the egg and milk to the flour mixture, handling as little as possible!. Put the dough in the fridge for at least one hour!. Roll out the dough to a thickness of 4 mm!. Cut into strips about 8 cm long and 2!.5 cm wide!. Cut each strip into three lengthwise, leaving one side uncut!. Now plait the three pieces and press ends together firmly!.
Pre-heat a deep pan and remove syrup from the fridge!. The hot fried koeksisters must be dropped into the cold syrup!. The syrup will warm up about halfway through, so divide the syrup into two bowls!. Deep-fry koeksisters until golden brown, drain for a few seconds on absorbent paper and dip into cold syrup!.

And here is a genuine KFC recipe for chicken that you may eat hot or cold!.!.!.!.
GENUINE KFC SECRET RECIPE
2 cups flour
1/2 tsp salt
1/2 tsp thyme
1/2 tsp basil
1/2 tsp oregano
1 tbsp celery salt
1 tbsp black pepper
1 tbsp dry mustard
4 tbsp paprika
2 tsp garlic salt
1 tsp ground ginger
3 tbsp MSG (called Accent or Zeal in supermarkets, an important ingredient)

Mix all ingredients well in a large bowl!.
Although the ingredients and proportions used above are correct (use finely ground ingredients only, or grind them yourself), the cooking process is difficult to match as not many people have an oil pressure cooker handy, the following method approximates the outcome fairly well for home use!.
Dip chicken pieces in beaten eggs Then turn them over in regular bread crumbs (commercial) Finally plunge them in the flour-spices mixture (above) Heat oven to 350 degrees Place chicken in a tray and cover with foil (shiny side out) Cook 40 minutes!. Remove the foil then cook for another 40 minutes Baste lightly with oil 5 minutes before the end Let stand 5 minutes and serve!.
