Any good slow cooker recipe that include eggplant? ?!

well i dont have a slow cooker recipe but i do have an eggplant one!.
slice eggplant into round slices , if it is a big eggplant you can half those slices
dip eggplant slices in milk, then in plain white flour,shake off excess but make sure completelty coated
fry eggplant in vegie oil until nice and golden brown,do both sides!.
lay on a papertowel to absorb extra oil!.
take a 11 inch cake pan (glass is good) lay them out flat ,one single layer!.
cover that layer in spegetti sauce and cheddar cheese!. then add another layer of eggplant!.
another layer of sauce and cheese
another layer of eggplant (if you have alot of eggplant)
then on top another layer of sauce and cheese
bake like 25 minutes at 375!. when cheese is melted and bubbly
enjoy this is sooooo good!. i try to have it atleast 1 time a week!. Www@FoodAQ@Com

brown a lb of gr beef with an diced onion and some garlic!. Throw itin the pot with a peeled and diced eggplant, can of tomatoes, can of tom paste and herbs you like (italian ones work best here)!. Let this cook in the pot until the eggplant is soft!.
Take a loaf of french bread, slice off the top, pull out the insides and fill with the beef and eggplant, top with sliced mozz cheese and put the top back on!. Broil til hot and bubbly and then slice and serve!. My family loves this!. I also add some zuchinni!. Black olives would be really good too!.

I make a ratatouille with summer squashes, carrots, celery, onions, tomatoes and egg plant!. I've found that I need to peel my egg plant though!. For some reason the skin toughens up, and gets bitter!.Www@FoodAQ@Com
