You can keep the raw sliced potatoes in cold to room temperature water as long as you want!. The starch doesn't hurt you!. The starch is left in most potatoes and potato dishes (think about baked or mashed)!. Some people are trying to reduce the amount of starch they consume, so they soak the potatoes!. I do it for convenience! This way I can peel the potatoes early in the day rather than after guests have arrived!. Putting them in the water keeps them from browning from oxidation!.Www@FoodAQ@Com

You really only need to do it if frying them!. Slice them up, put them in a big bowl of water as you go and swoosh them around!. Yank them out and dry them with toweling!. Cook!.

Potatoes can be kept in water for a long time with no ill effect!. It is done to keep them from going brown!.
