i need help on cooking a good dish for my in laws, i thought about spaghetti casserole, but that's too common, or shrimp and rice casserole, but they ate that before!.Www@FoodAQ@Com

Here's a delicious and easy to prepare menu item that I would serve with a nice tossed salad!. They'll love it!

Mediterranean Turkey Casserole

Serves 8

1 pound Medium Egg Noodles, uncooked
1 14 1/2-oz!. can low-sodium chicken broth
1 cup skim milk
1 tsp!. salt
1/4 cup cornstarch
2 cups chopped cooked turkey
1 14-oz!. can artichoke hearts, drained and quartered
1 7 1/2-oz!. jar roasted red peppers, drained and sliced
9 large olives, pitted and sliced
1/2 cup grated part-skim mozzarella cheese
1/2 cup white wine
1 tsp!. fresh lemon juice
1/2 tsp!. black pepper
Vegetable oil cooking spray
2 tbsp!. grated Parmesan cheese

Prepare noodles according to package directions; drain!. Stir the broth, milk, salt and cornstarch together in a large pot or Dutch oven until the cornstarch is dissolved!. Cook over medium heat, stirring constantly, until thickened and bubbly!. Stir in noodles, turkey, artichoke hearts, red peppers, olives, mozzarella cheese, wine, lemon juice and pepper!.

Heat oven to 350F!. Spray a 3-quart baking dish with cooking spray!. Spoon noodle mixture into dish!. Sprinkle with Parmesan cheese!. Bake until bubbling around the edges, about 35 minutes!. Let stand 5 minutes before serving!.

Here's a simple but elegant dinner!.

Pineapple Cranberry Pork Roast

3 lb boneless pork loin roast
2 tsp seasoned salt
1 tsp ground black pepper
1 (20 oz) can pineapple chunks, undrained
1 (8 oz) bag dried cranberries

Rub the pork roast on all sides with salt and pepper, and place in a slow cooker!.
Pour in the pineapple chunks and juice, and sprinkle in the cranberries!.
Cover and cook 7 hours on Low!.
Be sure to let the meat rest before slicing!.

POBLANO CORN CHOWDER with SHRIMP

4 tablespoons (1/2 stick) butter, room temperature
2 tablespoons all purpose flour
1 medium onion, coarsely chopped
3 celery stalks, coarsely chopped
2 large poblano chilies,* seeded, chopped
2 (14 3/4- to 15-oz) cans cream-style corn
1 16-ounce package frozen corn kernels, thawed
2 14-ounce cans low-salt chicken broth
1 cup whipping cream
2 teaspoons sugar
1/2 teaspoon cayenne pepper
1 pound uncooked shrimp, peeled, deveined, coarsely chopped
6 tablespoons chopped fresh cilantro

Mix 2 tablespoons butter and flour in small bowl to blend; set aside!.
Finely chop onion and celery in processor!. Melt 2 tablespoons butter in large pot over medium-high heat!. Add onion-celery mixture and chilies; sauté until soft, about 6 minutes!. Add creamed corn and next 5 ingredients; bring to boil!. Reduce heat!. Whisk in butter-flour mixture and simmer 15 minutes to blend flavors!. Add shrimp and 4 tablespoons cilantro; simmer until shrimp are cooked through, about 5 minutes longer!. Season with salt and pepper!.
Ladle chowder into bowls!. Sprinkle with remaining 2 tablespoons cilantro!.
Makes 12 first-course or 6 main-course servings!.

Chicken Scampi
(easy but delicious and elegant)

1/2 cup butter
1/4 cup olive oil
1 tsp dried parsley
1 tsp dried basil
1/4 tsp dried oregano
3 cloves garlic, minced
3/4 tsp salt
1 Tbsp lemon juice
4 boneless, skinless chicken breast halves, sliced lengthwise into thirds

In a skillet heat the butter and olive oil on medium high heat until butter is melted!. Add parsley, basil, oregano, garlic and salt and mix together!. Stir in lemon juice!.
Then add chicken pieces and saute for 3 minutes or until white!. Lower the heat and cook for about 10-15 mintues or until chicken is cooked through!. More butter can be added if needed!. Serve chicken over hot angel hair, or other pasta and pour some of the sauce over it all!.

Make sure you have some bread to 'sop' up the sauce! This is really good and so quick and easy, but it has a nice presentation on the plate!.

Roasted Asparagus with Parmesan
Serves 4

2 bunches asparagus (1? lbs!.), washed and ends snapped off
1? Tbsp!. olive oil
Kosher salt
Freshly ground black pepper
? cup finely grated Parmesan cheese

Preheat oven to 450oF!. On a rimmed baking sheet, toss asparagus with olive oil!. Season with S&P to taste!. Arrange in an even layer on pan, and sprinkle w/ parmesan cheese!. Roast until asparagus is tender and cheese is melted, 10-15 minutes!. Serve immediately!.

Try Greek Chicken (recipe below) and Bowtie Pasta with Margherita Sauce!. I've made this quite a few times and always get the best compliments for it!.

Marinate boneless skinless chicken breasts in a 75/25 mixture of lemon juice and olive oil with salt and plenty of basil and (fresh if you can get it) overnight or not less than 2 hours!. After Marinating, either grill or broil the chicken!.

For the sauce, it sounds complicated, but is quite simple!. Heat 2 tablespoons of olive oil in a large skillet and sautee 1/2 of a chopped onion or 4 minced shallots!. When they start to turn clear, add 3-4 cloves of minced garlic!. When the garlic starts to brown, remove from heat!. Add 2-3 cans of peeled, diced tomatoes and stir!. Stir in 1/3 cup of red wine (Merlot or Cabernet) with 3 teaspoons of basil and reduce heat to low-medium!. Cook uncovered for 1 hour, stirring occassionally!. Again, it sounds complicated, but is quite simple!.

1 hour sounds like a long time to spend on sauce, but you have to "reduce" it so that the acidic properties dissapate or it will taste like hell!. Adding sugar and cooking for 20 minutes does not turn out well at all either!. However, you can cook it the day before and refridgerate it, reheating it just before they get there!. My girlfriend says it tastes better that way anyhow!.

Top the pasta with the sauce, add the chicken to the side and serve with a side of garlic bread!. If you want an extra side, try Alessi brand lentil soup!.

Great question! How to impress the in-laws!. You could go two ways:
1!. Cook something your spouse said was a standard at their table growing up!. The risk here is that it will not ever be the same (=as good)!.
So I would suggest!.!.!.
2!. Go for something that never or rarely was on their table, something a little exotic, something that seems complicated but really isn't!. (No need to confess how easy it was!.)

chicken ranchero!
boil a chicken and shred it
mix creame of celery (1 can), chicken(1 can) and mushroom(2 cans), and can of rotel
take corn tortillas and dip in the chicken stock
layer in a baking dish - tortilla, chicken, soup mixes, shredded cheese
layer until pan is full with cheese on top
cover with foil
bake (i usually go with 400) untill its all melty
uncover and let the cheese get a little brown
