Can I substitute ricotta cheese with cream cheese?!


Question: Can I substitute ricotta cheese with cream cheese!?
I want to make a spinach filling for jumbo shells but I don't have ricotta cheese or cottage cheese!. Www@FoodAQ@Com

Yes, but be sure to add eggs to the filling and parmasan cheese!. The eggs will serve as a binder so the cream cheese doesn't melt and spill out of the shells, and the parmasan will cover up the flavor more of the cream cheese, which has a stronger flavor than ricotta, and also, with parmasan, it will give that real Italian flavor to the dish!. You can also sprinkly mozzarella on top of it all and that too will make it taste more like the original version!.Www@FoodAQ@Com

It will be denser and more salty than with ricotta, so you'll have to adjust seasonings!. Soften the cream cheese (a few seconds in the mircorwave), you could add some plain yoghurt to lighten it!.
If there is egg in your mix, you could also lighten the mixture by adding the yolk but whisking the egg white till stiff then quickly incorporate into the mix just before you stuff the shells!. That will give it a little more air!. Www@FoodAQ@Com
