Angel Food Cake -- What Do I Do With All These Yolks?!
I'm going to make an angel food cake and will have a dozen yolks left!. I heard you can freeze the yolks and the last time I made this cake I did freeze them(whole, not beaten)!. When I thawed them out they were rubbery and didn't beat smoothly, they were full of chunks!. What did I do wrong!?Www@FoodAQ@Com

You can use them with whole eggs to make scrambled eggs, French toast or omelets !.!.!.!.!. make a zabaglione sauce to put over the Angel Food cake !.!.!.!. make a custard!. Hint: I bought a container of powdered egg whites, just so that I could bake without having all those extra whites:) It keeps well in the pantry for a long time!.!.!. While you're getting it, also get a container of powdered buttermilk, for those times you just need a little in a recipe:)Www@FoodAQ@Com

Mix 1/8 teaspoon of salt or 1-1/2 teaspoons of sugar or corn syrup with every four yolks when you freeze to inhibit their becoming gelatinous!.
