Tinned pumpkin .... what do people use it for?!


Question: Tinned pumpkin !.!.!.!. what do people use it for!?
I'm normally in the Y!A dogs section and I am constantly reading about tinned pumpkin - both for pies and unsweetened!.

As an Australian, I find this a really strange concept!. We buy our pumpkin fresh and then use it as a vegetable, baked, steamed etc, or to make soup!. And yes sometimes even as an ingredient in very tasty scones! I also do a really great stir fry with pumpkin, chickpeas, tomato, green beans, olives and morroccan seasoning !.!.!.

What do people do with tinned pumpkin!? And is it mashed or in chunks!? I have to know :-))Www@FoodAQ@Com

I'm not answering your question!. Plenty of great answers already!. But I will share another point!.

A colleague's daughter is now living in Australia and she is often surprised at the little differences she finds from the lifestyle from here at home in Canada!.

She was astounded that few people seemed to know about carving pumpkins into Jack O' Lanterns at Halloween!. She also didn't expect to find that so many products readily in Canada (US influence) are not available in Australia!. It really hit home how far Australia truly is form North America and how self-sufficient!.

As a Canadian, I've always felt a special kinship with Australians and New Zealanders!. Coming from British colonial histories as we all do, we have something of a shared background!.

tinned pumpkin is usually found creamed, but can also be found in chunks!. Chunks are generally cooked in cassaroles with marshmallows and brown sugar!. Creamed or mashed pumpkin is used in pumpkin pies, (a Thanksgiving and Christmas favorite) pumpkin bread, pumpkin scones, pumpkin cream of wheat, pumpkin pancakes, and pumpkin cakes!. The usual seasonings served with pumpkin are ginger, all spice, a little cloves, a lot of cinnamon, and sometimes molasses!. The bread is a breakfast food, along with scones, pancakes, and cream of wheat, but the cakes and pies are generally just treats at holidays!. We also use fresh pumpkin for vegetable dishes including stir fry and soups!.Www@FoodAQ@Com

The canned pumpkin here in the US is pureed!.

It's most commonly used for pumpkin pie and pumpkin breads!.

I also make a soup that calls for it as an ingredient!.

It is called "solid pack", and it is a chunk of mashed, cooked pumpkin!. Here in the US, pumpkin pie is a major holiday tradition, and most people are too lazy to prepare it from fresh!. Google a recipe & try it, it's pretty good once you DOUBLE the spices!.

We also use it for doughnuts, muffins, dessert breads, and pumpkin cheesecakes!.

Canned pumpkin is good and can make a good substitute for oil in certain baked goods!. However, the American tradition is to add tons of sugar, nutmeg, cinnamon, ginger and cream and to then bake it in a pie shell!. Serve it with a wad of whipped cream and you'd never guess it was a healthy pumpkin!.Www@FoodAQ@Com

Pumpkin Chocolate Chip Cookies - Pumpkin Roll - Pumpkin Bread - Pumpkin Cake - Pumpkin Pie - all good but the first two are the best!

Pumpkin Roll
3 eggs
2/3 cp pumpkin
? cp flour
1 cp sugar
2 tsp cinnamon
1 tsp ginger
? tsp nutmeg
1 tsp baking powder
1 tsp lemon juice
? tsp salt
? cp coarsely chopped walnuts, optional

Filling
1 cp powdered sugar
6 oz cream cheese, room temp
4 Tbls butter, room temp
1/2 tsp vanilla

Beat the eggs on High 5 min – no less! Stir in the pumpkin!. Add the flour, sugar, spices, baking powder, lemon juice, and salt!. Stir just till blended!. Add the nuts if you’re using them!.

Pour into a greased and floured 10 x 15 inch pan (basically a cookie sheet with edges)!. Bake in a 375* oven for 15 minutes!. Remove from oven and cool 5 min!. Run a spatula underneath it to ensure that it isn’t stuck to the pan and turn onto wax paper!. At one end fold the wax paper over the end a few inches!. Start with that end and roll up into the wax paper!. Cool completely!.

Prepare Filling
Use a potato masher or fork to blend the cream cheese and butter together with the vanilla!. Add the powdered sugar and continue with the potato masher till it’s all blended and creamy!. Unroll the cooled pumpkin roll and spread the filling over it all!. Re-roll without the wax paper!. Freeze for easy slicing!.

Pumpkin Pecan Cake
3/4 cp brown sugar
1/3 cp butter, melted
3/4 cp chopped pecans
Stir sugar into melted butter until sugar dissolves!. Pour into two well-greased 9” round cake pans!. Sprinkle in the chopped pecans

4 eggs
1 2/3 cp sugar
1 cp veggie oil (I use 1/2 cp)
2cps pumpkin
1/4 tsp vanilla
2 cps flour
2 tsp baking powder
2 tsp pumpkin spice
1 tsp baking soda
1/2 tsp salt
3/4 chopped pecans
1 12 oz container Cool Whip
In a mixing bowl beat the eggs, sugar, and oil together!. Add the pumpkin and vanilla!. Add the dry ingredients and beat just until blended!. Carefully spoon into the cake pans!. Start from the outer edge or the batter will push the brown sugar mixture all to the edges!. Bake at 350 for 30-35 min

Cool 5 min then turn cake onto wire racks to cool completely!. Place one layer, gooey side up onto a serving plate!. Spread with two thirds of the Cool Whip!. Top with the second layer, also gooey side up, and spread with remaining Cool Whip!. Sprinkle with a few pecan pieces!.
Can also be done in an oblong cake pan and its still very good but all the gooey, yummy stuff is hiding on the bottom of it!.Www@FoodAQ@Com
