Question: What alternative can I use in an indian recipe that calls for 15% cream!?
I'm making a butter chicken (makhani) recipe that calls for a cup of half-and-half, but I'm on a low budget and I want to replace it with something I already have!. I've got balkan yogurt (already an ingredient in the recipe, so I'm afraid it'll make it unbalanced), about half a cup of coconut cream (just hoping it's still good), and 2% milk!.!.!. what could I do!?Www@FoodAQ@Com

The reason your recipe calls for 1/2 and 1/2 or Heavy Cream is because you are putting it with acidic ingredients (like tomatoes) and w/out the fat, it will curdle!.

What to do:

Stabilize your milk by pre-mixing in 1 tsp!. cornstarch to 1 and a half cups cold milk!. This will make it so there isn't chance of your milk curdling!.

Then, just use the milk!.Www@FoodAQ@Com

1/2 and 1/2 is about 15% cream!.

But Use your 2% It will be a bit less rich but still very tasty!.Www@FoodAQ@Com

Maybe coconut milk or reg!. milk, or yogurt or just exclude it!.
