Apple Dumplings w/ cinnamon-ginger ice cream--apple dumplings are easy, basically I buy frozen pie shell, thaw it, wrap around peeled, cored apples, toss in raisins and cinnamon, maple syrup, and bake!. Make your own cinnamon-ginger ice-cream by simply mixing those spices and a dash of maple syrup with vanilla ice cream!. Yum!. If ice-cream is too cold for you, do it with whipped cream!.

Apple Crisp--bake apples like you would for apple pie, but no crust--instead, top w/ walnuts, brown sugar, flour, and butter!. Easier and better than pie! Serve w/ ice-cream or whip cream!.

Pumpkin custard--I found recipe on line, is similar to pie but has more eggs and I think less sugar, and then I made a caramel topping, and baked it like a flan--with the caramel on the bottom of the bake dish, flipped the custard over to serve!.!.!.yum

Cranberry Fluff--mix whole-berry cranberry sauce w/ blackcherry jello mix, cool whip, walnuts, marshmallows!. serve w/ maple cookies on the side!.

Appetizers:
Stone-ground/whole-grain wheat bread, spread with cream cheese, whole-berry cranberry sauce, toasted chopped pecans, and deli-sliced turkey!. Cut in little triangles!.

Turkey wraps--mix cream cheese w/ toasted, chopped pecans, whole-berry cranberry sauce, and spread on deli-sliced turkey!. Roll the turkey up, and secure w/ a toothpick!. An option--instead of cranberry sauce, use dried cranberries OR fig jam!.

Hot-pepper jelly and cream cheese on whole-wheat toasted pita triangles!.

Cheese Ball--mix cream cheese, blue cheese, green onion, parsley, diced walnuts, parmasan or cheddar cheese shredded!. Form into ball and serve w/ crackers or small sliced sourdough baguette, OR keep in a bowl with a spreading knife and let guests spread the cheese mix on their baguette pieces!.

Mini spicey corn muffins--Mix cornbread mix as called for--I use Marie Callendar brand, easy, just add water--then, mix in mild green chiles, chopped sun-dried tomatoes, diced jalapenos, and shredded cheddar and jack cheeses!. I don't measure--just use enough of it all so the batter looks lumpy and clumpy and you can see all the stuff you added!. Bake according to package, in mini-cupcake paper cups that are orange, or have autumn-themed symbols (I go to the craft store, Micheals to get these!.) Good luck! Www@FoodAQ@Com

This can be for either an appetizer or for a simple dessert:

Serve a variety (at least 2 or 3) of cheeses, special crackers that you love, and dried fruits such as figs, apricots, cherries, etc ~ figs and apricots work especially well!. Add a bunch or two of really sweet grapes (like sweet little champagne grapes)!. This is easy to do, can be very impressive, and is versatile!.

This goes WAAAY beyond pumpkin pie!. It's delicious!. It's pretty huge!. It looks gorgeous - no one will believe you made it!.

Pumpkin Cheesecake with Caramel Swirl

Crust
1 1/2 cups ground gingersnap cookies
1 1/2 cups toasted pecans (about 6 ounces)
1/4 cup firmly packed brown sugar
1/4 cup (1/2 stick) unsalted butter, melted
Filling
4 8-ounce packages cream cheese, room temperature
1 2/3 cups sugar
1 1/2 cups canned solid pack pumpkin
9 tablespoons whipping cream
1 teaspoon ground cinnamon
1 teaspoon ground allspice
4 large eggs
1 tablespoon (about) purchased caramel sauce

For Crust: Preheat oven to 350°F!. Finely grind ground cookies, pecans and sugar in processor!. Add melted butter and blend until combined!. Press crust mixture onto bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides!.
For Filling: Using electric mixer, beat cream cheese and sugar in large bowl until light!. Transfer 3/4 cup mixture to small bowl; cover tightly and refrigerate to use for topping!. Add pumpkin, 4 tablespoons whipping cream, ground cinnamon and ground allspice to mixture in large bowl and beat until well combined!. Add eggs 1 at a time, beating just until combined!. Pour filling into crust (filling will almost fill pan)!. Bake until cheesecake puffs, top browns and center moves only slightly when pan is shaken, about 1 hour 15 minutes!. Transfer cheesecake to rack and cool 10 minutes!. Run small sharp knife around cake pan sides to loosen cheesecake!. Cool!. Cover tightly and refrigerate overnight!.
Bring remaining 3/4 cup cream cheese mixture to room temperature!. Add remaining 5 tablespoons whipping cream to cream cheese mixture and stir to combine!. Press down firmly on edges of cheesecake to even thickness!. Pour cream cheese mixture over cheesecake, spreading evenly!. Spoon caramel sauce in lines over cream cheese mixture!. Using tip of knife, swirl caramel sauce into cream cheese mixture!. (Can be prepared 1 day ahead!. Cover and refrigerate!.)Www@FoodAQ@Com

I would use any recipe that involves fall vegetables or fruits!. I started making an apple crisp lately that does not taste like apple pie!. I slice apples on the thin side, sprinkle oats over it, some cinnamon and honey, and bake it for 15 minutes or so!. It's similar to apple pie but better since it's homemade and you know what's going into it!. Www@FoodAQ@Com

pumpkin pie usually does it!.!.!.but my daughter is allergic to pumpkin, so we haven't had that in my house in 2 years :) and she hates apple pie, so why make it!? my and my hubby can't eat it all on our own!.!.!.SO, german apple spice cake with rich caramel sauce is usually my pick :) It has apples, cinnamon and caramel, all of those nice fall flavors!.!.!.
