I am a former chef and do alot of Indian cooking and both dishes are gluten free, potato's and cauliflower for the aloo gobi are no problem and dals are made from lentils which are also gluten free, gluten is a form of starch generally from flour or farinous products like wheat!.
Hing or asafetitia is a dried product, I buy it here in Toronto Canada and have some in my pantry now, it helps to reduce the gassy properties in beans and lentils, thur dal is red lentil cooked with spices and onions, I use veggie broth for a totally veggie meal, just boil them with the spices, diced onions and they cook faster than the brown or other dals like Channa, I like to have both together as one complements the other, I also like a sloppier Aloo not as dry as some restaurant make, as for the rice if you wash and soak good basmati, it will be less of a problem but the flour on rice is gluten free!.Www@FoodAQ@Com
